I don’t know about you but I LOVE my slow cooker. If I wasn’t marrying my fiance, my slow cooker would be a close second.
What are your favorite slow cooker recipes?
Tonight I made a lemon chicken. I LOVE this meal. It takes about 5 minutes to prepare and lasts for a week (for 2 people).
1 whole chicken (gizzards & neck removed)
1 full clove garlic, separated and peeled
2 sliced lemons
-Remove the fat/skin of the chicken as much as possible. Trust me, slow cooked skin is NOT tasty. It’s slimy.
-Coat the inside and outside of chicken with salt and pepper
-Stuff all of the garlic inside the chicken
-Put a few slices of lemon inside the chicken. Cover the chicken with the rest of it.
-Sprinkle a little thyme (or another spice of your choice) over the chicken.
-Cook on low for 8 hours.
I HIGHLY recommend discarding the lemons when you finish. The garlic goes GREAT with any side dishes!

My absolute fav slow cooker recipe that I make all the time for SO is chicken tacos. Just throw two boneless skinless chicken breasts in a crock pot, a half a jar of Newman’s Own salsa (I use roasted garlic salsa, MMmmmmm!) and a packet of taco seasoning. I just turn it on low when I leave for work at 8:00 and it’s done when I get home at five. I shred the chicken with two forks in the crock pot, stir it up, then throw a half a block of cream cheese in about 30 minutes before I’m ready to serve. Let the the cheese get soft, then stir it in and it makes this AWESOME creamy chicken mixture that is wonderful in tacos. I’ve also used it in burritos and quesadillas, too!
If you can’t find Newmans salsa, you can use any type of “restaurant style” salsa. I don’t like to use picanta sauce or chunky salsa with it, like Pace, because I think it turns out weird. Newmans comes in a jar that is the size of the tostitos salsa jars (the little short ones), so I don’t know the exact measurements for the salsa, but it’s half of that lol.
This makes about the perfect amount for the two of us to eat for a pretty big dinner and we usually have some leftover, but not enough to save.

Love my slow cooker too! I just made the bbq pulled chicken recipe from Skinny Taste and it was great. Right now, I’ve got her beef barbacoa simmering away in the crock pot. It looks delish!

Slow Cooker Pulled Pork
2+ pounds of pork shoulder (bone-in tastes best); One 12 oz can Root Beer (not diet!); and your favorite BBQ sauce. Put pork in crockpot, pour root beer on top, set to high and cook 6 hours or until it falls off the bone. Fish out the bone, drain the root beer, and use forks to shred/pull the pork. Add BBQ sauce to wetten the meat a bit (add as much or as little as you like.) Serve on Texas toast or toasted hamburger bun.

Me and DH favorite meal in the crock pot is Shredded Buffalo Chicken. All you have to do is get about 3 lbs of chicken breast, hot sauce (use as little or as much as you like), butter, and a block of cream cheese, put it all in the crock pot, let it simmer in the crock pot on low for anywhere from 4-6 hrs, and the chicken just pulls apart, we usually put it on rolls and make sandwhiches. It lasts a couple days for us as well!

I have an all-in-one rice cooker/slow cooker/oatmeal cooker and I adore it! I make a lot of risottos in it, which always come out perfectly! In the past I’ve done a lot of roasts and stews in the slow cookers, but I’m looking for more vegetarian recipes since I rarely cook with meat anymore.

We had slow cooker pulled pork last night! Fiance used an apple butter BBQ sauce and it was amazing.
I think my favourite slow cooker recipe is potato bacon soup. Yum.

i use one of mine (i have three) at least twice a week, sometimes up to four times a week. i love them. i actually got a “crockpot recipe a day” calendar for christmas.
the current favorite of FI’s is apricot chicken. i modified the recipe from this one: http://www.sixsistersstuff.com/2012/01/slow-cooker-apricot-chicken-recipe.html . i use 2-3 chicken breasts, and i cut the dressing (i alo use creamy french dressing instead of russian) to 1 cup, and the jelly to 1 cup. we also use apricot pineapple jelly (i get ours at walmart). i serve it over rice and with a side of broccoli. so so yummy.
