Take some boneless, skinless chicken breasts and a jar of salsa...throw it in the crockpot on low all day. Shred it when you get home from work and there you have easy chicken tacos!
Another we love is Hawaiian BBQ. Get a pork roast that is pretty fatty, add 2tbsp liquid smoke and 1tbsp sea salt (rub it all over the roast). Cook on low for 16-20 hours. Shred and serve with rice.
Pork loin+ bottle of bbq sauce= yumminess! Shred it with two forks when it's done for totally nom worthy pulled pork sandwiches.
Chuck roast with vegetables of your choice. Usually potatoes, onions, celery, carrots etc. Add a small can of tomato paste, some cream of mushroom soup, and a dash or two of good wine of your choice. Seasonings and spices of your choice too, like garlic, salt, pepper, etc.
The secret to cooking any cut of meat in the crockpot is to sear/brown it in a pan on the stovetop first, before putting it in the crockpot. It helps seal in the juices and keep it tender.

The Crock Pot is the only reason my husband eats home cooked dinners during the school year! We have definitely gotten our $$$ worth. You will love it. My favorite recipes so far is this Chicken Enchilada Soup from AllRecipes. I have made it for company several times and serve it with tortilla chips, sour cream, cheese and green onions. Hey Ladies!
I just bought a crock-pot (a cheap one lol) but I realized I have no slow cooker/crock pot recipes. I am on weight watchers, so I'm looking for healthy foods, BUT if you have something that's really good but not quite so healthy I'd be interested in those, too (it's fun trying to find ingredients to substitute to make them healthier). I've never used a crock pot before, so I'm a crock pot virgin.
So how about it ladies, have any good recipes to share!?
