slow cooker/crock pot recipes

I throw chicken beasts in mine with a package of taco seasoning and a jar of cheap salsa. Then I take the breasts and throw them in my kitchen aid with the batter blade which perfectly shreads the chicken. We make tacos, spicy chicken salad, and tons of other things with the chicken. A few chicken beasts go a long way once their shredded.

@piperbee:  I look at recipes to get some ideas but generally I’ll just throw whatever sounds good in there. I seriously cook everything in there, even pastas and rice.

@piperbee:  I’m addicted to my crock pot, I use it about 3-4 times per week. Most of the recipes I use are from Skinnytaste.com & Pinterest! A lot of the meals I make in the crock pot are enough for 6-8 servings so we can split it for multiple days worth of dinner. Sometimes I freeze the leftovers and re-heat them the following week! Skinny Taste has a ton of healthy & low calorie recipes (like you, I gain weight looking at food), so I really have to watch what I eat. I’m sure you’ll find lots of great recipes on there! 🙂

Once a week we take a while chicken, put it in there. I add rice and frozen broccoli. Then I cover it with one can cream of mushroom, some season salt, garlic powder, cayenne peppers (really any spices you like), and water for the rice and/o chicken broth. Cook on low for 8hrs. If you Google cream of mushroom chicken slow cooker recipes, there are tons of variations of this recipe and it’s delicious.

I just made a full chicken in a bed of potaToes. I stuffed the chicken with some rice and beans leftovers I had and OMG it was soo good! The rice inside the chicken and the potatoes underneath it absorb all the juices and seasoning from the chicken and yummy! Also super easy to make. Normally I just put the chicken and the potatoes but had the leftovers so decided to experiment and I’m super happy about how it worked out.
