I got married at The Full Moon Resort in Big Indian, NY. It's more of the Catskills than the Hudson Valley, but it's a lodge where all your guests can stay together. You pay for the welcome dinner and the wedding reception and your guests pay for their other meals (very reasonable $15 per person per meal and the food is plentiful and delicious).
40 people might be a little small for them, but if you are willing to do a Sunday- Tuesday get away or off season, they may accomodate you. Their website is www.fullmoonresort.com.
I am not engaged yet, and we aren't getting married in NYC but are definitely doing the destination type wedding. we will have foods like a gourmet burger bar, steaks jambalaya, perhaps even some loaded baked potatoes and smores for dessert... very relaxing... i want it to look like an upscale backyard bbq. The cost will be around 18 pp for 50-75 folks.

I am looking for a unique and budget conscious mini-destination wedding for us and our 40 guests in The Hudson Valley.
Initially, I had found a gorgeous B&B with a ballroom that would be perfect. However, all things need to be brought in and the price would be over $200 pp with only limited food (compared to a catering hall for example). There must be a cheaper and more practical way to make our wedding unique.
I am wondering what other brides with small weddings on a budget might have done. Did you find the perfect place? Was there anything unique you did to make your wedding special but save money (i.e. I heard of brides renting a house for the week and making their wedding into a vacation for their guests for the same price as a wedding).
Just curious if anyone managed to have a unique/creative/different wedding on a budget in The Hudson V.
