Smoked Salmon OK? What if I freeze it first?

@Evie19:  yum, omg!  I have like 4 pounds of smoked salmon in my fridge right now that was a christmas gift from work and I haven’t known what to do with it!  THanks for the recipe.

On a sidenote, have you tried freezing it?  Does it still taste good and have a decent texture when thawed?  I’m scared to open the package cause I don’t think we can eat all that salmon in the 4 days it recommends before going bad…

@Evie19:  Sometimes cheeses/dairy does not freeze that well (though some things-like butter- are fine).  Things like ricotta…I would be worried it won’t taste the same or have the same texture.

Can you just freeze the salmon on it’s own and then thaw and make it that day and serve/eat?  That would be better IMO.

Sorry, I can’t tell if you’re freezing the entire dip or just the salmon.
