I drank soy as a child, then moved over to lactaid- but these days Im doing the raw thing so Im keeping it natural. Anyways- lactaid is the same way! It says to drink within a week of opening, but I after the week was up, I would always test a little in a glass, do the sniff test then drink it to make sure it wasnt spoiled. It always seemed ok. Its been so long since I've had soy- but Im assuming it would be safe as long as it was stored properly and didnt go too far over the date (5 days max?).
I'm a vegan soy milk drinker and no way do I finish a half gallon in a week. More like a week 1/2 - 2 weeks. I've never ever ever had a problem with soy milk gone bad. When soy milk goes bad, the smell is VERY distinctive and strong. You will absolutely have no problem knowing when your milk is no longer drinkable.
I think it is the same for regular milk- you need to polish a half gallon in 5 days- and THAT is impossible for me. I drink 1 a week, so I think it is fine to stretch it a little. It is those paper cartons that don't keep fresh :/ I wish I could get a whole gallon! I have never noticed mine going bad, but I do use it every day in my mate'.
I've definitely stretched it, but I'll usually drink half a gallon a week. Buy a quart at a time if you're worried about it.
We go through ours pretty fast but we really only care about the expiration date and that has worked fine for us.

Do you notice that on the carton it says to drink it within 5-6 days after opening? Do you think this is really necessary? I'm the only one who drinks soy milk in our house and there is no way I can finish a whole half gallon in 5-6 days. The expiration date listed on the container isn't usually for a month or so after I purchase it, but the whole 5-6 day thing seems a bit crazy to me.
