Here are a few details of the color scheme etc. The bridesmaid dresses will likely be these exact ones in this color (pistachio) plus a picture of me in my dress (will be getting a different sash, shoes and hairpiece) and I really like the bouquet including hops.
Ideas for the guys include something like this boutonniere (I’ve been collecting bottle caps) and I love this style of tie (just not sure in what color).
Any ideas on what color the guys suits should be and whether they should go with full suits or just a vest without a jacket? Thanks!

We used a similar green in our wedding colors and my husband wore a khaki vest and pants from Express. We got married in the desert so we didn’t think a jacket would be appropriate. The groomsmen just wore khaki slacks with ivory shirts and a green tie. I think it’ll depend on your venue and the mood/vibe you’re trying to go for.

rothy: The choice of a full suit or vest and pants, is influenced by the formality of the wedding. Are you planning on asking the men to buy their outfit no matter which choice you make? Or, would they be renting suits?
I would choose grey.
A dark grey (charcoal) suit is something that even men who don’t normally wear suits, will always find a use for in attending weddings and funerals.
You don’t say when your wedding is. You might be able to find a good buy in grey suits if you have time to look around. If you have all the men’s measurements, you can do your research and when you find something that is available in all required sizes, you can let them know to purchase it asap. Keep in mind that suits will require alterations so the time for that needs to be factored in.

rothy: What a beautiful location. Given that it will likely be hot the men can always remove their jackets after the reception gets underway.
Linen suits wrinkle a lot, but that is part of their charm.
A lightweight wool is commonly chosen for a summer suit.
Your original option of a vest and pants would also work.
