I ultimately decided not to use a professional videographer, but I thought other brides might be looking, too. I emailed several times with Ken and he seemed very nice (and very responsive); however, I never met with him in person.
Ken ended up shooting our wedding as a sample, which is now up on his website. I don't know if anyone is interested in this type of film in CO, but we had a nice experience so I thought I would share. The direct link to our video is here. I just fell in love with Mrs. Onion's film coverage (by Wes Jones) and was so happy to find someone offering a similar service locally.
I searched high and low for someone who provides Super 8 mm videography in CO. I finally found someone in Boulder:
