My hubby still asks for 'Engagement Chicken!' He loves it! I believe there was a follow up recipe in the magazine called 'How-to-Hook-Him' Apple Pie or someting to that effect. Have any dessert plans yet??

Just cleared the table. It was really good but there were a few distractions. My son didn't finish his homework so we flew into action taking care of that. But the chicken was really good! The mac n cheese is awesome as usual (if anybody wants that recipe I can get it for them) and the veggies were consistently good.
Now it's up to him.
But it sure was fun!!!
I hope your engagement chicken works. Crossimg my fingers for you. Hopefully T doesn't try to do somethign stupid like HIDE your ring in the chicken next time. LOL. I'm sure he's smarter than that, but THAT would be a funny story

Not sure why I think this is funny but for some reason, it'd be terribly ironic considering how long you're waiting for that damn thing!
Ohhh PLEASE share the mac & cheese recipe! lol I commented in a post saying thats the one thing I wish I could make. I never had mac & cheese as a child... yeah deprived! I've been trying to find the perfect recipe since I started cooking. Mmmm... your dinner sounded so fantastic!

I don't know about engagement chicken, but if that fails try turkey burgers! That's what I made the night we got engaged!

I love this! I saw it in Glamour and was seriously annoyed because, well, my boyfriend doesn't eat chicken. He's a pescatarian! And even though I'm sure it's just silly... I at least wanted to give it a try!

I think actually in retrospect he liked the mac and cheese better! It does rock! I'm at work but I can get you the recipe tonight when I get home.
I'm gonna do a variation of it and add some grilled or rotisserie chicken and some broccoli florets or asparagus....
We'll see. I'm just getting really PMS-sy right now and a bit tired of the whole thing waiting right now. Actually my meatloaf is way better than the engagement chicken btw.
Veggies are super easy. Use food processor and slice up a few zucchinis, yellow squash, onion ( I like vidalia), carrots and add pre sliced mushrooms into a baking pan. Spray pan w/olive oil first to make sure veggies don't stick to it. Drizzle olive oil (about 2-3 tablespoons worth) over veggies and stir. Add in 1/2 cup (more if you wish) of balsamic vinegar (or less if you prefer ) and stir. Then sprinkle over the top some kosher salt and stir. Bake in oven at 350 for about 20 minutes checking every five or so to see if they are tender! It's yummy!
Here's my recipe I got online and it absolutely rocks!!
HARD ROCK CAFE TWISTED MAC N CHEESE
Menu Description:
"Twisted cavatappi pasta, tossed in a lightly spiced 3 sauce with roasted red peppers and topped with Parmesan parsley breadcrumbs."
2 Cups uncooked cavatappi pasta or elbow macaroni
1/3 Cup whole milk
4 Ounces Velveeta
1/2 Cup shredded cheddar cheese
1/2 Cup shredded Monterey Jack cheese
1/8 Teaspoon ground cayenne pepper
1/8 Teaspoon ground black pepper
1/4 Cup diced roasted red bell pepper
Parmesan Breadcrumbs
2 Teaspoons seasoned breadcrumbs (Italian style)
2 Teaspoons grated Parmesan cheese
1/4 Teaspoon finely minced parsley.
Cook pasta following the directions on package. Drain.
Combine milk, Velveeta, cheddar cheese, Jack cheese, cayenne pepper, and black pepper in saucepan. Cook over low heat until cheese is melted and sauce is smooth. Add pasta and roasted pepper to the pan, and then toss to coat the pasta.
Combine the breadcrumbs, Parmesan and parsley in a small bowl.
Pour pasta into a serving bowl, and then sprinkle Parmesan breadcrumbs over the top!
Btw, sometimes I leave out the roasted red bell pepper b/c my son doesn't like it but it tastes fabulous even without it! This is the best cheese sauce ever and I usually add MORE cayenne. Just a tad for that kick!~
it's awesome! YOu can add rotisserie chicken chopped up to it, and sometimes I toss in some pre-cooked broccoli florets and or asparagus spears!

Yea, you know what it is.
Engagement Chicken.
Is it because it smells so dang good (even when I was placing it in the oven with its lemony peppered goodness)? Is it because it's because you think your guy is for some wacky and unfounded reason a chicken when it comes to giving you the ring? I'm not sure but since this is kinda fun and the recipe sounds and smells great, I'm going for it!!! Lol!
So I've made my famous roasted vegetables along with it (compliments it perfectly) and the side is also my famous stolen version of hard rock cafe's twisted mac n cheese! This dinner is going to literally rock!!!
And hopefully that rock will be on my hand quite soon..
He is under my lemony peppered spell ladies!!!! Lmao!
Btw. I have pictures of my chicken in its prep stages! I'll take a pic of it when it comes out and I'm sure T will think I totally flipped my lid.
Hopefully this will be a really funny story I'll recite in recaps this time next year!!!
