Ooh, this is really hard to read with all the html in it... Do you think you can edit to make it more readable?
That sounds so yummy. Don't doubt yourself! I just was thinking about how it is important to make your guests happy. If I was a guest at your wedding, I would be in heaven since I'm a pig and love to try a variety of foods.
This sounds great. As long as everything is spread out nicely so people aren't waiting in a long line for the stations, this should be great! The pictures of your venue definitely seem like this could be done. I would love to go to a wedding with such a variety, and it's nice not to sit in one spot for an hour and a half while dinner is being served!

Also when you post pictures, the nbsp&: sometimes rears it's ugly head. I try to think of it as a friend :)
I think it sounds amazing. If your coordinator has done something like this before, I'm sure he/she can figure out how to make it organized.
I love your idea of stations-- I don't think it will be too chaotic... atleast not more chaotic than most wedding receptions lol!

It sounds wonderful! we are doing something similar. The assigned seating may stiffle some of the movement and mingling that this set up seems to want to create though- somthing to think about... We're paring a similar menu with pub tables, rounds of various sizes and lounge seating to help foster the movement and mingling.
my friend's wedding had a ton of food like this in different stations and it actually worked well - not everybody was piled into the same line, and when it was time to dance, all the food was taken away except dessert and maybe some small bites.

@knit: I thought for sure I would NOT do assigned seating back in the good old days of 120 MAX ... But around 260 are invited so far ... most people (on other boards b/c I am a tad frustrated with the size) are thinking only around 200 will come. Then I started to think how I really like to have my own seat and put my drink and purse down. They will still be allowed to choose which seat at whatever table assigned. We shall see!:) Also, I LOVE the lounge seating!! Are you renting it from someone or providing your own? We were looking into it as well ... I doubt it will make the budget, but we shall see! LOVE a good relaxed party!!
@Melissabegins: I am so glad it worked so well! Yes, we are planning on strategically setting them at a distance from one another so people must walk around and chat and be social.
I recently went to two events (one was for my FI baseball team) and one was for a rehearsal dinner. The food was spread out and they had high tops at both. I was starved after both. Mainly because there were long lines and I would get to chatting and not eating. Also, the food wasn't very good at either... so that might have something to do with it!
Seems like a lot of action. Do you have a lot of older people or those that are clumsy and incapable of holding a plate and moving around?
Miss Saph: About 60% older(+50) and around 40%(18-50) younger people. I know that part concerns me too. I really like the idea of maybe giving them a menu at their place setting during cocktail hour and explaining what's at the different stations. and where it all is. do you think this will help or still too much

When I was first planning I thought about the weddings I had particularly enjoyed. Buffets were always fun! I was so shy leaning toward a sit down just because it seemed too stuffy for me. So I was thinking about heavy hourves dourves and then action stations.
This is what is in my contract now.
At Cocktail hour they will have butler passed Crab Ceviche in a cucumber cup, Proscuitto wrapped asparagus, shrimp cocktail in a shooter glass, and chicken and mushroom profiterios.
THEN we will have action stations. spread out? and two bars.
1. Sushi man making california rolls, and yellowfin tuna and smoked salmon with wasabi, ginger, wakeme salad and soy sauce. This was one of my fiances few requests. So it's honored.
2. Pasta station. Penne pasta with sundried tomato, shiitake mushrooms, kalamata olives, pancetta, reggiano cream sauce, and marinara sauce.
3. Then TWO carving stations. One will be a Carved steamship Round of beef served with horseradish cream sauce, mustard sauce and mini cockatil rolls.
Then a Carved Roasted Turkey with a banana orange rum sauce served with mini cocktail rolls
4. A Veggie Stations with red potatoes, creamy risotto, grilled zucchini, roasted red pepper, and asparagus.
YES. we are a little obsessed with food. Also, each station will be manned.. they won't be just piling it on.
QUESTION for my bee's!
Do you think this is a recipe for chaos? My planner assures me that it will be fine... but I fear chaos. I'm thinking now toward a sit down which may cut my fiances little sushi man out?
