FI and I went to a group tasting held by our caterer this weekend and overall things were pretty good however I was VERY disappointed with their cake. From the beginning of planning I have wanted a red velvet wedding cake. When I met with the caterer originally before we signed with them, they promised that they do red velvet even though it was not on their menu. So before the tasting I emailed my contact about having red velvet cake at the tasting and she said she'd have the pastry chefs do it. So fast forward to the tasting - the cake starts coming out and I see the tray with the red velvet and it is, like, PINK. It doesn't look like red velvet is supposed to look. I tasted it - it was dry and just not right. I'm thinking that they didn't really know WTF they were doing and just dumped some red food coloring into some other type of cake, but they couldn't even do THAT right because it looked like a hot pink mess. So I was pissed. I can't get my own red velvet because they charge a $2.50 per person cutting fee on top of what I would have to pay for the outside cake and my parents won't go for it.

So, yeah, I'm kind of annoyed. Their apps and mains and the food at the stations was (for the most part) really good, but the cake situation SUCKS. Kind of soured the whole experience for me but I'm just gonna need to suck it up and deal with the fact that the ONE THING I knew I wanted in terms of food, I don't get.

Is there any way that you can get the cake from someone else and just go to the for the food?  I'm sorry it was so bad!

If you must use their cakes, I would definitely ask to try other flavors.  Clearly this isn't their specialty.  You may find another flavor that tastes great (even though it wasn't your first choice).

I'm sorry - that must have been really disappointing.  Did you get a chance to taste any other cake flavors to see if they are better?  If so, would they charge you extra if you had a small red velvet groom's cake made by a bakery in addition to ordering a white cake for the guests from your caterer?

There were other flavors we tasted and we liked the vanilla with white chocolate mousse so we'll be going with that. We hadn't planned on doing a groom's cake and I can't rationalize spending additional money for another cake when we're already having Smores in addition to cake. I'm just annoyed because I kind of feel like I was deceived and it sucks because I really like them otherwise.

Traditional red velvet doesn't have food coloring in it and I've seen the gamut as far as the reds are concerned.

How did their red velvet taste?

I agree with maybe bring in a small red velvet grooms cake from the bakery of your choice (that way the cutting fee won't be CRAZY).

Did you talk to the caterer about the issue?  I would ask them to try again and come back for a second tasting until they get it right.
