This is my first year teaching and I’m teaching middle school. I’m getting married 18 days after school starts and so I asked for my email to be aligned with what my last name will be after I get married and the school changed all of my information to what my last name will be. Do I just start the school year with what my name will be or do I use my correct maiden name for 18 days??
Also I’m not quite sure how to explain the situation to parents if I use what my last name will be and not my current last name.

Since it’s middle schoolers, I think it would be fine to use your current last name until you get married. If they were younger, I’d say go ahead and use your soon to be last name since it would probably confuse them. But whichever you decide seems fine. I don’t know why you’d have to explain anything to the parents.

Just say, “My name is Miss Smith but after Sep 22 it will be Mrs. Jones”. If you send an introduction/information sheet to parents (as my kids’ teachers do), just say the same thing in that. Middle schoolers know most women change their name when they marry, as do their parents. They can all handle it. I’ve handled teachers’ name changes both as a student and as a parent. It’s really not a big deal.

I agree with PPs that you could warn them in advance, but I think since it’s only 18 days I would be way simpler to just start off with your new last name.
