tell me about steak knives, what to register for and why?

    Hello! I am learning about steak knives right now. I have some gift certificates. I have had global knives and I love them. But I am not sure if I want them for the steak knives.

    Do you get stainless steel or high carbon steel or some combination of both?

    What brands? What is the best value? I know that if I blow $400 on 4 knives, they will be good. I want to stay under $200 for four knives.

    Really I thought I could get 4 knives for under $100. Who knew that was such a challenge?

    I know that I want a straight edge and non-serrated so that the juice doesn't drip out (new to me...but that explains my mother's dry turkey).

    I had trouble balancing what I wanted with reasonable cost...but in the end, cost won.  We registered for (and got) two Henkels Twin Signature 4-piece sets, $59.99 at Bed Bath and Beyond.  Honestly, they are great and I'm glad we didn't register for the $200 set because I think it would have been overkill.  After using them for a couple months, I still can't tell the difference between these and the Wusthof knives I was originally looking at, although I'm sure there must be something "better" about the Wusthofs to justify the cost difference.  I guess it comes down to, will it bother you to know that your knives aren't the best of the best?  If not, there are several nice mid-priced knife sets out there!

    Cazsos that was sooo helpful.
    HL I looked into the Henkels twin signature sets, those look good too. I think that if we ever get a place big enough to hold a barbeque in, I would buy a bunch of those.

    But, I splurged! Macys sent me this great registry completion gift card of $158. OMG right?!?!?!? That's just because people bought me things.

    So I searched on their website and I found these Shun stainless steel knives on sale for $179 from $452ish. Shun is top of the line! It was a closeout. So I also had 20% off for my registry completion and I bought them! You can't even get the knives in the store, only online. All I had to do was pay $16 for shipping! I am so happy with my score. I hope that the knives are nice.

    Caszos, yeah, Target has great things. I did Bed Bath and Beyond. I like stores with inexpensive cha cas. But both BB and Beyond and Target have high end things too.

    I saw that Target has their own Riedel wine glass line that looks really good and the price is right. $50 for four glasses and they are crystal. I also love all of their everyday dishes. Then Target has kitchen aid mixers and really great electrics.

    But no registry gave me a gift certificate back at the end! That was sooo cool. I would not have bought such expensive knives without it.
