It seems that she might be okay with it. What if you stuck to wine and champagne? Then it would seem like something that is served with dinner and not just t drink.
I'd say it's okay to go ahead with the alcohol, just give everyone a heads up that the others will/won't be drinking so they don't try to offer/get offended. :)

So my FMIL doesn't drink. At all. Ever. And I completely respect that. Yet my family, being the big Irish debacle that it is, drinks. Especially to celebrate, and especially at celebretory dinners. Mind you, we aren't crazy sh*ts shows. Also, note that all of my futures siblings in law imbibe. And my FMIL appears to respect that.
My FMIL is throwing the rehearsal dinner for immediate family and the bridal party.... is it wrong or something to expect that there will be drinks at said event? I'm not looking for a keg, but I can bet you that my wonderful bridal and groom-al parties will want a drink with their dinners.
How to deal with this? It is still, thank god, a while away.
