You are definately supposed to send the card when the gift arrives; that also saves your guests worrying that the gift didn’t make it for some reason.

Prewriting the cards thanking people for coming is a great idea!  Then you just have to make sure you only send out cards to those who do show up.  Maybe if you write those cards upon receiving the RSVP – that way you don’t write cards saying how great it was to see them at the wedding for people who RSVP with regrets.
