For all cash gifts, we explained how we were going to use it — like buying new knives, putting it towards our honeymoon, etc.

Just say “thank you very much for your generous gift” and then spend more time on how wonderful it was to see them at the wedding or how you hope you will see them soon.

@carbear02:  Maybe you could say somthing along the lines of: “we greatly appreciate your monetary gift toward our honeymoon. Your generous gift will be remembered as we will cherish the memories from our trip for a lifetime”

I always say I what I plan to/want to/used the money for; same goes for gift cards, etc.  

“Thank you so much for the generous $100!  We were so surprised and happy that now we can treat ourselves to a lovely dinner and night out dancing on our honeymoon!” or whatever you did with the money.
