I just tried to be generic.
Ex. Thank you for the toaster. We will get a lot of use out of it with our weekly Sunday breakfasts. Thank you again.
I had a harder time with people who I didn't know as well too!
I just put
Name,
Thank you so much for __________ we look forward to using it for _____________. Thank you for making our house more of a home!
With love & thanks,
_______________
or for $$ gifts I put "Thank you so much for your generous gift. We are saving for a home and it means a lot to us that your gift will be part of that...." or something to that effect.
I had a couple like that... I struggled with how to greet them in the card. (Mr. and Mrs. or first names?!). I ran into this with some of my husband's distant family members who I hadn't met prior to the wedding. After getting his input on that... I just honestly thanked them for whatever they were kind enough to give us!

Hi Bees
Im working on thank you notes right now and I am having the worst time writing them for people I have not met (family friends of parents or FI's parents)
Anyone else have trouble with this?!
