I think it's ok to group the gifts together, since there are so many. Maybe you can point out one or two that you especially love.
Myself and a couple of colleagues went in on a similar baby shower gift recently, and the thank you I received was similar to what you wrote. I didn't think it was too impersonal - I was too busy "aww"ing over the little baby feet on the front of the thank you card! :)
I had the same issue and wrote something similar to each of the guests who went in on a gifts but I usually referenced one thing specifically to make it a bit more personal.
I did a similar thing for combo gifts - one of my cousins gave me like 5 different kitchenware items for my wedding. I said something like "thank you for your generous gift which I'm excited to dive into - the measuring cups and cutting board have already gone to good use and I can't wait to try out the others! It was really thoughtful."
I think what you are planning is really all you can do without sounding silly!

My coworkers held a baby shower for me today, which was very thoughtful and nice.
What I'm not sure about is how to word individual thank you notes for some of my coworkers who went in together on a group gift. They gave me two huge gift bags loaded with a variety of things, from swaddling blankets to a stroller cover, microwave sterilizer, bottle warmer, Mommy hook, bath supplies, etc.
I want to write individual thank yous to them for coming and for contributing to the gift, but when I try writing out what I'm thanking them for it sounds like a laundry list of items.
Would it make sense instead to write something like:
"It was so nice seeing you at my baby shower, thank you so much for coming.
Thank you also for all the practical baby care gifts that will be put to good use to take care of our little boy. It was incredibly generous and thoughtful of you, and will make our lives a lot easier.
Thanks again for such a wonderful day"
This just seems kind of impersonal and like I couldn't be bothered to write about how much I like/would use each item.
Any suggestions/advice would be greatly appreciated!
