    Not exactly a family recipe. But I love to make and have parsnip puree as a side. Just remember that the amt of heavy cream this recipe calls for is too much. Happy thanksgiving!

    I have a corn souffle recipe that is always a hit.  It's so yummy, especially when it's all warm and straight from the oven.  Happy Thanksgiving! :)

    2 Tbsp. butter

    1 pkg.  (8 oz.) cream cheese, cubed

    1 can (15.25 oz.) whole kernel corn, drained

    1 can  (14.75 oz.) cream-style corn

    1 pkg. (8.5 oz.) corn muffin mix

    2 eggs, beaten

    1 cup Shredded Cheddar Cheese

     

    HEAT oven to 350ºF.





    MICROWAVE butter in medium microwaveable bowl on HIGH 30 sec. or until melted. Stir in cream cheese. Microwave 15 sec. or until cream cheese is softened; stir until cream cheese is completely melted and mixture is well blended. Add next 4 ingredients; mix well.

    POUR into 13x9-inch pan sprayed with cooking spray; top with Cheddar.

    BAKE 40 min. or until golden brown. Cool slightly.

    ddubzz,  Thanks-- that looks delicious!  Maybe I will try that for Christmas-- my husband wants me to cook some traditional American Thanksgiving-type foods for our Christmas party.  I was explaining to him about thanksgiving yesterday morning, and he was perplexed by the idea of pumpkin pie.  "Is it sweet?  Is it savory?  WHY would you eat that?!?!"  hahaha

    pren79-- thanks for the tip on the cream-- I'll give this one a try as well, as we buy this big bag of root vegetables from the store and the only thing I know to do with parsnips is to roast them.
