I love reading these posts! What are you ladies making this week for dinner?
Sun – I had take out from the most amazing Thai place near my apartment. Thai chicken salad, and roti with satay sauce.
Mon – I’m making casarecce pasta with crispy pancetta, leeks and mushrooms, and I’m just going to make some kind of onion/garlic/cheese sauce to go with it.
Tues – Roasted chicken breast with sweet potato mash and roasted garlic brocoli.
Wed – I’m going out to a place in the City that is a very kitsch 50s style underground bar that serves wood fire pizzas.
Thurs – My fiance is coming home after working away, so I might cook something special. Or we might just get take out 😀
Fri – Date night!
Sat – We are going to an engagement party, but I might make a light chicken salad with grilled, spiced chicken and a mustard/balsamic dressing. We eat this a lot but it is delish.

@SydneyJen: You’re so cute, planning out the whole week! I’m a procrastinator. Yesterday I made Broccoli Cheese Soup and it was so freaking good. Today I think I’m gonna make carne asada with broccoli, red pepper and onion (little butter, little chicken stock) for the side. Tuesday-Saturday…I don’t have a clue.

I’ve got a dodgy wrist at the moment so my lovely fiance is doing all the cooking.. Seriously all of it. Its so awesome…

Saturday – we’re both at a bucks/hens gig (separately of course!!) so no idea..

My goal this week is to eat lightly until Thursday (Thanksgiving), but my SO is a very meat and potatoes type of eater, so I’m not 100% sure what I’ll actually be making. I was thinking maybe chicken salad tonight

We try to plan ahead but its hard. And I like to make things that are large enough for leftovers at least once. I travel for work and DH goes to the gym so we cant be cooking every night. We only cook 2-3 times a week. This week its only 2 nights.
Sunday/ Monday: Penne with tomatoes and spincach in a ricotta sauce (tons of leftover)
Tuesday: Veggie, ham and couscouse blend with potatoes
Wednesday: Concert w. my mom so likely leftovers or take out
Friday: Turkey leftovers
Saturday: Whatever is on the plane because we are off to Rome =)

we don’t have a specific schedule but for this week we made.
pesto pasta, orange and garlic marinated chicken breasts, sun dried tomato chicken thighs, pesta chicken, braised collard greens, kale, and onions in a apple cider sauce, roasted butternut squash, and roasted spaghetti squash.
we are going away for thanksgiving for a few days, so from thursday to saturday will be eating out.

- Wedding: October 2011 - Bed & Breakfast
Sunday- Went to one of our favorite Indian restaurants. Yum!
Monday- Bean and bacon soup with homemade cheddar bread. It’s 16 degrees F right now. Definitely a good day for soup. 🙂
Tuesday- Beef and broccoli with brown rice
Wednesday- Pork adobo with black beans (and whatever rice is leftover from the night before)
Thursday- Thanksgiving, Italian style, with Mr. LK’s family (We are contributing homemade rosemary focaccia and a salted caramel apple pie to the dinner. I am ridiculously excited to try my hand at making this pie!)
Friday- Avgolemono soup (recipe shared by another Bee that sounds divine.)
Saturday- Taco casserole in the slow cooker

Today I am baking some sockeye salmon with garlic and onion seasoning to put on an arugula salad with a sweet viniagrette, craisins, and candied walnuts. Probably some parmesan cous cous as well
I have a pork tenderloin to make in the crock pot with BBQ sauce, onions, and some apple cider- gonna make pulled pork sandwiches with that with a side of bakes beans
I bought chicken breast cutlets to cover in taco seasoning and bake and then top with a Mexican corn salsa. Probably with yellow rice
And then Thanksgiving dinner and a few days of leftovers 🙂

- Wedding: August 2013 - Wynn Las Vegas
Today: Mahi Mahi with steamed broccoli.
Tuesday : TACO TUESDAY! Carne Asada in Romain lettuce instead of tortilla shells.
Wednesday: Bison patties with Spicy broccoli
Thursday & Friday : VEGAS! We will see what the Vegas gods offer us woo!~
Our menu isn’t too exciting bc we are on a pretty strict diet. But hey, I’ll look sexy in Vegas.

Tuesday- Goulash (my grandma’s recipe, it’s supposed to be cold and icy and its such a warm meal)
Wednesday- Quiona stuffed peppers
Thursday- Thanksgiving! 😀
Friday- Friday is always pizza day
Saturday- Mexican Pie (homemade with ground turkey instead of beef, and homemade crust)

Tues- Roasted Salmon with baked potato green beans and a lemon piri piri sauce
Weds- sausage casserole with mash
Thurs – pasta with marmite sauce
Fri- my first night back at work after maternity so i get food at the pub. DH will probably have fish fingers and smash (he doesnt cook)
Saturday – lemon chicken with roasted potato wedges
sunday – roast dinner

We usually do a weekly menu, but with the holiday this week and travelling to visit my family, we’re not going to do a real grocery shop until we get back. I think I’ll make some easy pasta (maybe tortellini?) tonight, and quesadillas or panini sandwiches and soup tomorrow – then the rest of the week we’ll be at my parents’ place. Our contributions to the Thanksgiving meal on Thursday will be pie (pumpkin and apple) and either cranberry sauce or baked yams (haven’t decided yet), and DH is frying a turkey! 🙂
