We were in what sounds like a similar situation. We had just started new jobs and neither one of us were able to take much time off. So, we decided to stay somewhere nice the night of the wedding and then take the Monday after off. It worked out nicely. I was a little tired after all the festivities and was really thankful when that weekend after came up so I could get some rest but I certainly don't regret our decision or feel that I was cheated of anything. We are planning on taking a really nice trip for our first anniversary to make up for it though.
We will have just moved (into my house, right before the wedding) and since FI has kids, even though they are plenty old enough to leave alone, we didn't feel right about leaving them for a week or more in what will still be a strange house. So we are having a little weekend away (Saturday and Sunday night) in a fabulous old hotel 45 minutes away in the wine country, and coming home Monday; going back to work Tuesday.
We are actually waiting almost 6 months for our real honeymoon, because we decided if we were waiting a month or more, we might as well decide on our dream trip and have that be the honeymoon. We both love Aspen during ski season, but have never been there together, and the best snow is probably in February, so February it is (ten days, yay)! I think it totally makes sense to wait for the trip we really want, rather than taking a trip we are less excited about just to do it closer to the wedding.
This also lets us take a couple of days off right before the wedding, when stuff will really need to be done, and family will be in town.
Do a honeymoon afterwards or do a quickie mini moon somewhere not too far- we are doing a 2 day mini moon and then having friends join us for new years

Unfortunately my fiance and I are unable to take more than one day off the week after the wedding. The day will be used for travel and won't be very restful. He started a new job a few weeks ago and does not have benefits so he does not want to take additional days off. Any other brides out there not having much down time after their big day?
