Need more info: are you inviting the same people to both the wedding and the reception? If not, I would absolutely send out two STDs.
If not, it depends on how formal you want your STDs to be, what size, and how much information you want on them. I'd use standard STD wording (i.e., "Save the date for our wedding! April 16, 2010, Riviera Cancun, Mexico") and then the info on the Denver reception--i.e, Save the date for our wedding!... Reception in Denver to follow, May 2010.
It also depends on where your guests are from. If you're from Denver and so is almost everyone you invite, I think I would leave the reception info off the STD and include it on a website that you provide with the STD. People seem to be confused by receiving too much information at once. :)
How about doign a big "save the dates!" and then listing one date, and "marriage in mexico!" under it, then I see a scroll-like thing and under that, the second date, and "celebration in _____!" And then, we'd love to have you attend both celebrations! Formal invitation to follow.
Then on your formal invite, make the RSVP for both, so they can RSVP to one or both.
This is only if everyone will be invited to both!!!
Thank you all for your ideas. We are inviting everyone to both events and a majority of our guests will be coming from Colorado. Close family from California, that can be reached via phone (my mom loves to talk).

Another question, do you have to write formal invite to follow? I guess that I feel like it is implied that an invite is coming if you receive a save the date?

I would write "formal invite to follow" because I have heard of people (who don't read enough Weddingbee obviously!) get confused by STDs and think they are an invitation. I would also make it clear what the two dates are, i.e. wedding ceremony in Mexico and reception in Denver. At the moment it kind of looks like two weddings, which would confuse me as a guest.

We are getting married in Mexico in April and having a reception in Denver in May. I need help on how to word the save the date.
