It was absolutely FANTASTIC!
Since going dairy free, and basically totally (unnatural) sugar free, I thought I’d never eat pudding again. Not that I’m a huge sweets fan, but I do love chocolate anything!
I read about this blending avocados with cocoa powder and a few other ingredients a while ago but I wasn’t won over right away. Even my avocado obsessed chocolate loving brain wasn’t quite sure how to comprehend a pudding made with avocados. Seems strange..
I had lots of avocados in the fridge today and leftover dates that I wanted to get the heck out of the fridge so I figured what the heck. At the very least, someone will eat it.
So I put 2 avocados, 1/2 cup soaked and pitted dates, 3 tbsp cocoa powder, 2 tbsp melted coconut oil, 1/4 cup rice milk and a squirt of honey and dash of salt and cinnamon in the blender and hit mix. And waited. Added a splash of milk, mixed again. Still not enough so I added another splash and the magic started to happen. The whirring, the blending, the smoothness. Turned the blender of, stuck aknife in to mix it before blending again, licked the butter knife. Oh my goodness. A that point there was still a chunk of date here and there and it wasn’t quite chocolately eough for me so I added about half a tbsp of ccoa powder and another dash of cinnamon and then blended it for like.. another 3 minutes or something. I wll admit, it took a while to blend it to perfection but hey, the blender does all the work, I just had to watch! And when it’s finished, its velvety and smooth.
And it tastes like pudding. No sorta kinda. Nostalgic of those pudding cups we ate as a child, only way creamier and more decadent. Seriously delicious.
