So, I received the proposed menu and I’m concerned there’s too many starches. What do you all think?
Passed Appetizer Menu
Crostini’s topped with brie and a pineapple macadamia nut chutney
Sichimi seared ahi slice on won ton crisp with wasabi aioli and tomato
Kiawe smoked duck, mango relish, gingered hoisin and micro cilantro,
curried “edible spoon”
Cold Seafood Station
Display of poached shrimp, oysters on the half shell, limu poke, ahi sashimi,
and the appropriate sauces on ice.
Dinner Buffet Menu
Kailani Farms organic greens, guava basil vinaigrette
Kauai taro and sweet potato salad, honey sesame dressing
Fresh cut pineapples
Steamed white rice
Roasted baby red potatoes, garlic herbs
Furikake crusted salmon, wasabi soy butter sauce
Hoisin braised boneless beef shortribs, Hamakua mushrooms and baby bok
Roast rack of lamb, tamarind brown butter demi
Vanilla creme brulee bread pudding, salted caramel sauce
Miniature rootbeer floats
On one hand, I just want to say OK, you’re the expert.
On the other hand, I think it’s just too many starches and appetizers and they just want to push more stuff on us. I mean, we’re having a seafood station & and carving station. Am I being unreasonable?

You can’t really have too much food. This sounds like a well balanced menu to me. Unless cost is an issue I say leave it as is.

I would take out the roasted red potatoes, but leave everything else.

I would probably switch out the potato for a veggie. Between the sweet potato& taro salad, the rice, and the potatoes, it’s pretty much all meat and starch. Maybe you could get some spinach or something?

if youre going to get rid of anything i would choose the seafood station. But I an partial and would eat carbs all day long and never touch the seafood
Otherwise, I think the menu is great, there is quite a bit to choose from.
is cost an issue?

I think it’s a fine quantity, not overdoing it. I’d switch at least one sweet item for a savory though; to me, with all the tamarind, guava, pineapple etc flavors, your apps and mains are a bit too “sweet-heavy”. I like fruit salad after dinner, not on it. Totally get that it’s Hawai’i and they cook with a lot of fruits there, but changing 1 dish would give a better balance IMHO.
i’d also do something more interesting with the rice— steamed white rice looks boring on a buffet– and maybe trade the potato salad for another dish (perhaps a quinoa salad? not sure if it fits the theme) as you don’t need two potato dishes.
so not too much food, and really not too much starch, just not the balance I’d pick.

Cost is not really an issue as the pricing is very reasonable.
@fishbone: I agree and I think you hit the point on the head; FH and I have more of a savory palate then sweet.
@kjo: the Seafood station is a must for FH and I as we love seafood =) we also love carbs though, ha ha
thanks for your insight so far!! leaning towards switching out the sweet pot/taro salad for a different salad or a green but I’m still so undecided, lol.

I think it looks great as is, BUT if you feel better making a decision, I’d replace one starch with a veggie in the dinner buffet. I’m a huge carb fan but having more greens can be lighter for the guests so they can fill up on dessert 🙂 Maybe replace the taro salad unless your guests are big fans of taro.

I think you should definately leave the potatoes, I wouldn’t want a carving station or ribs without potatoes.
I’d probably take out the pineapple and possibly change the potato salad to a different veg or a green salad.
I think 3 appetizers is perfect.
If it was my wedding I wouldn’t have both a carving station and a seafood station.
Just my thoughts! Food sounds great though 🙂

I’d take out the rice, add a veggie and remove the seafood station. Sounds like way too much stuff- they always try to get you to add more, which can leave a lot of waste at the end! just imho:)
