If it's delicious, then there's no such thing as too much of anything. I think as long as the flavours in each dish are quite different then it should be ok. Especially because there are salads etc as well.
I wonder if maybe because there is only ~one vegetarian the caterer could perhaps make something for them without the chicken, but with the other ingredients of the appetiser. Maybe a creamy mushroom and pumpkin quiche/tart in the same puff pastry. Or mushroom, spinach, ricotta tart etc. Something that won't require much effort from the caterer but means your veggie buddies won't go without.

FI and I went to our food tasting the other day and LOVED one of the appetizers - chicken and mushroom in a shallot cream sauce, wrapped in puff pastry. It was like a chicken wellington type of thing. We chose a stuffed chicken breast for the main entree though.
Is this too much chicken? We don't have many vegetarians (maybe 1?), and the salad course does not have meat in it (so the only course the vegetarian would "miss" is the appetizer).
Any thoughts? We weren't crazy about the other appetizers.
