Yikes!  Can you find some kind of roll paper and have it pre-loaded?  At least that would be a couple steps you could eliminate.  And I don’t think you need to mention what to do if they make a mistake.

I would DEFINITELY try and eliminate some of the instruction… looks overwhelming =/

I agree with @lilybay try a long roll of paper or maybe have someone assigned to this area that can practice and be proficient  in changing the paper

Also I don’t know about needing to “correct” mistakes… I think they might be something to laugh about “look how so-so spelled that..” etc… you might even get extra “oops messed up… gosh darn it… lol” from the guests

Also, if you have someone to “man” the station then maybe they can help/give instruction so that your note to the guests can stay short and just a tid bit of info from you to them

“Leave us some advice we can’t live without…” etc.

Oh I just realized I commented on your other post.. I still kinda like the little rhyme/note to leave them. 😉
