I think its a great idea, I love baked potatoes and the toppings you have sound really good.  If you are worried about it not being enough food, you can always do chicken or steak as a “side” almost to go with the baked potato.  As delicious as they are, they are usually a full meal for me, but some people may not agree and want more “substance”.

I think it’s a creative idea and I’ve seen baked potato and mashed potato bars at weddings. However, I’d be more hesitant about it as the main dish and would urge you to consider having it be a side dish and have something more traditional for the main dish. Perhaps I’m weird, but I’m one of those people that really hates baked potatoes. Dressing them up with stuff doesn’t help.

I would use this idea as a “side” perhaps instead of the main dish.  I like the idea though!

I’m a super picky eater, so take my opinion with a grain of salt, but I would probably leave your wedding starving. I can’t stand potatoes in any form (except skinny, crispy french fries!). It also doesn’t seem like there is quite enough protein, even though chicken can be included in the potato.

That being said, you know your crowd of people best! I think if you gave a few more options (i.e. made the potato a side and offered chicken breasts or something as a main meal) then it could work 🙂

A completely different idea would be a dessert reception.  It can cost a lot less than a full meal or hors d’oeuvres.  I would probably have the reception either in the afternoon (after 2pm) or late evening (after 8pm) though so you don’t run through a “standard” meal time.  Just an alternative idea Smile

Edit:  I can understand feeling like no matter what you pick not everyone will be happy.  I can sympathize!

I think it would be better as a side.  Then have chicken as the main dish.  A stufffed potato and a salad probably wouldn’t be enough for me.

@bassethound: I know how picky of an eater I am. Because of that I NEVER expect people to accommodate me when it comes to food! My mother taught me to always eat what is served to me at someone else’s home/event.

If you did the potatoes, I would probably take the salad and just add the toppings to that instead of a potato (chicken, cheese, etc)!

It is…unique. Honestly, I don’t think I would enjoy that menu, it is pretty specific, but if you think your guests will, that’s what matters.

I think it’s a great way to incorporate something that you two really enjoyed. You could scale it down (offer one or two specialty ideas along with the basics) and just have a “vegetarian” dish that tastes delicous. Then if people want to add chicken or whatever to it, they can, but if you do good on the veggie dish, people won’t miss the protein (think indian cuisine, they don’t use any meat in most dishes).

@basset: I didn’t take offense at all! I was just trying to let you know you shouldn’t have to accommodate all us picky eaters 😉
