im not in the same situation as you, but im sure you could find generic songs to dance to. somewhere over the rainbow, what a wonderful world, isnt she lovely, etc...
My situation is sort of similar, as I have a stepfather who I like, but is not really a "daddy" kind of guy to me. We are dancing to "Wonderful World" by Louis Armstrong along with my FI and his mom. I didn't want all the attention and us and my FI was happy to help!
What about:
"My Wish" Rascall Flatts
"He Didn't Have to Be" Brad Paisley
or maybe just a song that you both love that has nothing to do with weddings!!
My dad was uncomfortable with a slow dance as his and my sister's first dance at her wedding. His response when he found out it was a tradition to have a father/daughter dance, he said "but other people will join us half way through, right?" lol. anyway, he really loves to dance to Frank Sinatra faster songs like "Come Fly Away" or others like "Isn't she Lovely" or songs like "Sway" by Michael Buble. It wasn't a traiditional slow, daddy's little girl song...but they had a blast showing off their moves on the dance floor!
I'd have to second "My Wish" by Rascal Flatts ... it is country but it's not super "country" if you know what I mean. The lyrics are absolutely gorgeous. My fiance and I are actually dancing to this song for our first dance (though the song was written from a father to a daughter) ... it's been our song for nearly 3 years so it can go in a bunch of different directions.
I had to copy the chorus in here so that you can see that it doesn't mention father/daughter at all:

I need some advice Bees! Here goes my story: when I younger, both of my parents passed away. Then at age 12, I was sent to live with my aunt (my dad's sister). After about 2 years of living with her and my grandmother, my aunt got married to my now uncle and we moved to his house with him and one of his three sons. I'm 25 now, so my uncle has been the father figure in my life and at the request of my aunt, he will be giving me away and thus we will be having the father/uncle dance together.
I'm having a hard time finding songs that aren't about "Daddy's little girl" or songs that talk about watching you grow from a little girl to a woman, because 1. I'm not his daughter and don't consider him my father. He is a father figure, but we're really not that close, and 2. He wasn't around when I was a little girl.
So the long and the short of it is, is anyone else out there experiencing a similar situation? And if so, what songs with you be dancing to with your uncle/brother/cousin/friend/grandfather/anyone who is not your father but that you will be doing the customary father-daughter dance with?
