So I thought I would write a follow up post to my hard hitting thread last week. If you missed it this picture sums it up nicely:
I figured people were being kept up at night wondering what I had done with the lovely gifts from the Zucchini Gods. So I present to you… My Dinner.
I also have like a third of the thing left. Seriously so much zucchini. So fried zucchini and maybe a few zuchinni sweet potato latkas are in the cards for Sunday breakfast.
Gotta love massive phallic veg 😀

@pinkshoes: bahahaha oh no. I have a black thumb for sure! It was left on my porch randomly last weekend. I believe it to be a gift from the zucchini gods. This is the second time I have been blessed with veg, in two different counties!

yum. looks like my mom’s zucchini casserole (zucchini breaded in breadcrumbs, fried and then layered with cheese and tomato sauce and baked). so good

@Little_Hedgy: I won’t lie. I was totally wondering what happened to the zucchini and am so giddy that you updated us. That dinner looks ahhhh-mazing! I’m going to have to give that a try next week, though with regular ole bought zucchini, heh.

@HisMoon: lol I can’t tell you how happy that makes me. 😀 Dude I scarfed that zucchini lasagna. It was sooooo yummy! Maybe with the power of positive thinking the zucchini gods will come to you too?
I’m so glad I taught FI to like veg. Otherwise I would be swimming is zucchini for forever.

Zucchini Lasagna- The Hedgy Way.
things you’ll need:
Giant freaking zucchini
Lots of ricotta cheese
Pre-shredded mozzerella (because hedgies are lazy)
Pre-made pasta sauce
Slice zucchinni into thin rounds. Line a baking pan with said rounds. Brown and season turkey. Mix riccotta, mozzerella spinach and italian seasoning until mixed. Thickly spread delicious cheese mixture onto the first layer of zucchini. Layer half the turkey on top of cheese. Smother in pasta sauce. Layer another round of zucchini and repeat all steps. Bake it until zucchini is soft or you can’t handle the delicious aroma any longer.

@EffieTrinket: I know! I thought that it would be enough for just this recipe and even wondered if i needed a supplemental zuc. No. Oh no no no so much zucchini left!

I shredded some zucchini into my burgers last time I made them. Just mixed it in with garlic and onions. It was good, and it used up some of the crazy amounts we also have.

OMG. My husband grew some INSANE zucchini this year. With all the rain it is the only thing that grew!! If I eat another zucchini dish I’m going run around my neighborhood naked screaming “ZUCCHINI B**CHES!” Maybe then my husband will stop making me cook it.
