Here's an blog with another couple looking for a vegan honeymoon and some ideas they found. I hope this helps!
I am a vegetarian, and am also allergic to peanuts. So I am always a little nervous when I travel about what I am going to eat!
Karisma resorts are fantastic. I've stayed there twice, and have always gotten great vegetarian dishes. We've had couples that have been vegan or gluten intollerant. We just email the hotel before they arrive, and the chefs at each of their restaurants have put together a list of recommendations for them to enjoy while they are there. they grow their own vegetables on property in a huge greenhouse.
Zoetry Resorts are also very vegetarian and vegan friendly.
If you want something really unique, I would recommend Ranco La Puerta. They have a fantatic vegetarian and vegan cooking school.
Just got back from Bora Bora (!). I'm a vegetarian who also avoids dairy (i do eat eggs though) - and had no problem at all in French Polynesia. It's not catered to vegetarians as most of their cuisine is fresh fish, but I ate like a queen and whenever I made special requests they were more than accomodating. They had oodles of coconut milk / pineapple / veggie dishes and I was in heaven.
I imagine the polynesian cuisine carries to hawaii too...

Hey! I'm also a vegan and tend to go with the "I'll make it work" mindset--I'll find vegan options where I go, but yeah, I agree that it is nice to have a much wider range. FI and I are currently considering Japan, which from what I have read is very vegan-friendly! We're not really resort people, so I don't have any recommendations there if that's what you're looking for, but you might want to check out http://veganbackpacker.com/. These people have been everywhere, and you might get some great ideas.

My fiance and I are starting to brainstorm about our honeymoon. We're both vegans, and we don't want to be stuck eating PB&J for every meal. Can anyone think of some fun potential destinations where they won't look at you like you're crazy if you say you're vegetarian?
