@LindsayMaree:  I’m glad you like her site! The lentil loaf is to die for. My non-vegan husband loves it too! I usually double the recipie and stick one in a disposable tin in the freezer. Also, make the vegan gravy with it (like for the shepards pie) and mashed potatoes YUM!

Making Fresh Corn Soup tonight!

2 tsp Earth Balance (can use oil too), 1/2 large yellow onion, 4 ears of corn (removed from cob), and 3 red jalapeno peppers sliced (seeds and all). Sautee onions in butter, add corn and peppers to pot and saute a few more min. Add 3 cups water and corn cobs to bot and boil – about 8 min. Add the juice of 1 lime, half a can of coconut milk (about 7 oz), salt and fresh cracked pepper to taste. Remove the cobs and puree mix in food processor, return to pot and EAT!

Veggie Soup is also super easy – Veggie Broth with any veggies you want. I usually make this at the end of the week when I need to get rid of the rest of my produce before it goes bad.

Another super easy dinner is Soy Crumbles with Sloppy Joe Sauce (not the healthiest but VEGAN) – it’s sloppy joes!

You can keep all of those things on simmer and just serve up when he’s home.

I really like the Post Punk Kitchen (http://www.theppk.com/) – lots of good recipes on there, and her cookbooks are great, too. I have Veganomicon and Appetite for Reduction.

Edible Perspective (http://www.edibleperspective.com/) isn’t exclusively vegan, but is nearly all vegetarian, and she gives options for veganizing most recipes. She’s gf, too, if that matters.
