@claire1212: Nope, I'm all the way in FL and not vegan, lol. Have you thought of trying to make one?
I'm not in the St. Louis area, but our groom's cake was vegan, due to DH's dairy allergy. Making a vegan cake is very easy (I make them ALOT) but I understand the other challenges involved. I'm sure you'll be able to find a baker who can accomodate your needs. If you can't and are up to it, I have several tried and true vegan recipes I can share if you'd like to PM me.
@claire1212: I am assuming that you have contacted bakeries in the area inquiring about vegan options and not had any luck. (If not, of course that's the best place to start.) A lot of bakeries will accomodate vegan requests, even if they aren't advertised - and especially if you're not going the super-traditional elaborate wedding cake route (and instead going for something a little bit smaller, less decorative, etc.). You could also contact vegetarian/vegan-friendly restaurants in your area to ask for recommendations. (I know you said veg food is hard to come by, but surely there are some options.)
Sorry I couldn't be of more help, but I'm not familiar with the St. Louis area. Good luck!
ETA: I just did a Google search for "vegan wedding cake + St. Louis, MO." I found these reviews for The Sweet Divine bakery... They sound great!
If you have whole foods there i'm pretty sure their bakery can do a vegan wedding cake for you. We were seriously looking into that until my grandmother offered to buy a cake for us somewhere else. We're vegetarian not vegan so we went with it.
Thanks for all the advice! I have mostly been looking into bakeries that advertise vegan cakes, but I will definitely look into seeing if others can accomodate vegan requests. I have thought about making treats on my own, but I will be coming in from out of town two days before the wedding, and I don't know that it's the best idea! And @MsBookworm, The Sweet Divine Bakery does sound great! In the process of finding out more ;)

Has anyone had any experience with vegan wedding cakes/cupcakes in the St. Louis area? It is so difficult to find places in Missouri that serve vegan food, especially desserts. Please help! Thanks!
