Make sure to catch a show!!! We saw Bite (topless vampire show) at the Stratosphere (where you should go to the top of the observation deck for the amazing views) and Beatles LOVE. i'd recommend both if the topics sound interesting to you.
I went for the first time over spring break (we're both teachers, not college spring break), it's where FI ended up proposing. We were there Monday-Friday and saw two Cirque de Soleil shows (O and Love), which were great! He had been before so he was my own personal tour guide. We spent a lot of time just exploring and taking it all in, looking at all the shops that we couldn't afford to spend money in, and a bit of playing the slots and not making any money.
@highwire: Bite sounds interesting! We are True Blood fans so that would definitely appeal to DH and I. 
@BeachyKeenBride: How cute that he proposed there! I've heard Love is supposed to be good from multiple people. We actually just saw Totem in Pittsburgh.
