Our vegetarian option is a spring vegetable risotto with mushrooms, asparagus, and other seasonal/local varieties.
^ Mmm, that sounds good! I know you wanted to stay away from pasta, but what about a vegetable lasagna? It could be made with a puff pasty instead of lasagna noodles.
I've seen portobello mushrooms prepared almost as a steak, which I guess works if you like mushrooms and want to keep it elegant. :) What I would personally do would be an Indian dish, but it might not fit in as well with the rest of your theme.
Mmm indian, yummy. What about something like a stuffed pepper entree? It could be done really elegantly and plated with some gnocci or something. I just heart gnocci.
I second the risotto idea! It is filling and delicious! I don't even notice that it is vegetarian most of the time.
Mmm, great ideas. You're all making me hungry though!
I bet we could do a stuffed portabello mushroom with risotto on the side, that would taste really good and be a little more elegant.
@Marigold - I love Indian food, care to share recipes? It may not go with our venue, but I would love to try it at home.
I have one good vegetarian Indian recipe, for chana masala (garbanzo bean curry)--it's the only thing I make that comes out consistently good. ;)
1 medium onion, chopped
2 cans garbanzo beans
2 medium potatoes, peeled and quartered
2 large tomatoes, chopped
1 Tbsp olive oil
1 Tbsp garlic powder (or more!)
1 tsp cumin
1 tsp chili powder
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp red pepper
2/3 cup frozen green peas
Sauté onion in olive oil until brown. Add browned onion and all other ingredients except the peas into a large stockpot, along with two cans full of water, and cook covered on high heat, uncovered, for 20 minutes. Add peas and cook covered for 10 minutes or until water has mostly evaporated, leaving a thick, stewy consistency. Add water while cooking if the water is burning off too fast; cook longer if it burns off too slow. Makes 5-6 servings.
I usually serve this with white Basmati rice (I stick it in a rice cooker with water, a little bit of vegetable oil, 1/4 onion, 1/2 cinnamon stick, 4 cloves and 2-3 bay leaves) and cooked spinach. It's soooooo good. ;)
Portobello mushrooms done up in some way is the one I've seen most commonly (my mom is veggie and she requested we have these at our reception). I went to a wedding recently with a sort of puff pastry filled with veggies.
I'd definitely look into a caterer that is familiar with vegetarian options if you are looking for something more out of the norm (outside pasta, risotto, veggie lasagna, etc). There is a vegan restaurant by my house owned by a friend of a friend. You should look at this menu! I've been and it's fantastic!
What about Polenta with some sort of hearty vegetable sauce? My mom and I love to make spinach-millet polenta with sun-dried tomato pesto.
I eat a lot of vegetarian foods (including a killer homemade curried lentil cashew burger), but I rarely make anything that would be fancy enough for a wedding. How formal is your wedding?
I live in Vancouver, BC, which has tons of good vegetarian dining options. A really popular, exclusively veggie/vegan resaturant is called the Naam. Perhaps you can have a look at their menu for some inspiration for you wedding! Here is the link:

i was recently at a vegetarian resto where they used seitan and tofu. how about something that incorporate those? they can be very flavorful. oh and my new fav mushroom- king oyster... it's luscious!
We were going to go with a pasta for the vegetarian option, but then we tried the chef's mushroom tart. Amazing!
@ Miss Parfait - mmm, that sounds delicious. Does your caterer do outside events? We're hoping to have the Newberry as our venue and they're open to outside caterers.
You said you like eggplant....could you do an eggplant parmesean? It's a bit like lasagna with eggplant if you've never had it. This was a typical entree at my all vegetarian college cafeteria and it was always a hit.
@mrsawesome - Yes, I love eggplant parm, I'm just worried it's not quite fancy enough? The side I've always seen it with is spaghetti, and I really do like the idea of a risotto side.
I'm a vegetarian and I CAN'T STAND mushrooms! It's kinda funny because generally the vegetarian option is generally something with mushrooms. We did a napoleon at our wedding which is basically eggplant slices, smoked gruyere cheese, mushroom (it was a big slice so I easily picked it off) and zucchini with a yummy red marinade on the top. Good luck, I know how tricky it is to please everyone ;)

I'm a veggie, so I'm excited to finally go to an event where I will be able to eat every course! We're having grilled portabello mushrooms filled with chevre and topped with grilled zucchini. The venue also offers a carmelized red onion tart with brie, but we're opting for the mushroom dish.
I love love love couscous made with diced veggies as a side... maybe breaded thin sliced medium density tofu (I love it lightly pan fried in applewood bacon grease - how strict of vegetarians are you, haha....) with a fruit based sauce for a main dish?
Eggplant makes a great meat substitute; you could do spaghetti squash as a twist on traditional (and carb-y) pasta; portobellas and other mushrooms are very filling.
What about flatbread with various sauces? Indian was mentioned, but you can do a lot with flatbread and a variety of spices/veggies and a food processor ;)
Lasagna is also an easy 'meat eater friendly' meal to go veg on, if you're worried about everyone choosing chicken. It's pasta, but again, not exactly your everyday plate of spaghetti.
@daydreamwanderer - LOL! We are strict with what we eat (i.e, no bacon grease!) but not strict enough that I never buy leather (I ride horses, try avoiding leather when you have a horse!) but I usually make my tofu in olive oil with some garlic.
I keep coming back to this thread when I'm hungry! (Stuck on campus between classes.)
I'm not too worried about the option being too "meat-eater friendly" because we will have a meat option. I am looking into family style dining, too, I really like that idea, I think it'll get everyone talking and create a nice vibe. We also have a LOT of vegetarians, three within my extended family alone, plus a bunch of my friends, bridal party, etc. Even those who aren't have expanded palettes and have learning to like tofu and more veggies.
Everyone else should be okay with chicken, I think. Does that sound reasonable? I don't want anyone to leave hungry - I know FSIL specifically made sure FI and I had good food at her wedding and it made a HUGE difference to us.
@bamm - your mushroom dish sounds amazing. It is definitely on the top of my list.

As FI and I are both vegetarians, we want to offer a good vegetarian entree at our dinner. (We will also offer chicken, for those who don't like the veggie entree.) I've sat through way too many meals at weddings and such events where the only vegetarian part of the meal was the salad.
I know pasta is the most common option, but I'm a little sick of it - we'd like something that has a bit more of our taste in it. We're awhile away from talking to caterers, but just wanted fun ideas in the meantime.
We're not picky people, we love eggplant, mushrooms, pretty much all veggies, soy, etc. We also have upwards of 7 or 8 vegetarians coming for sure (family, BP) and will probably have more, so I think it's important to choose something elegant to go with the feel of our wedding.
