I'd actually recommend picking out a few of the guests and getting their opinions. Since they are the ones who'd be eating it.
Cous cous all the way. As a vegetarian, I loathe eggplant dishes. It may be a texture thing, but still. That's all there ever is!
That cous cous dish with the black truffle sounds divine. I want it! :)
I'm not a vegetarian exactly but I don't like most meats. I usually ask for the vegetarian option at weddings. I say coucous for sure! Eggplant is okay but it is really not the most exciting of vegetarian options!
I am a HUGE FAN of eggplant (LOVE LOVE LOVE!) but I know that there are MANY people out there that really don't like it... so to be on the safe side, I'd go with cous cous. The eggplant sounds yummy though!

At first, when I saw your options I thought, "just couscous?," but then I read the post and it sounds amazing! The eggplant also sounded pretty good, but I am not a fan of miso.

Some people might not be a fan of eggplant... couscous might be safer
i would personally choose the couscous only b/c i really dislike sesame seeds and almost always have bad experiences with them at the many weddings i've been to!
I would ask a few of your vegetarian guests. I am a vegetarian and would love either of these options. But I also know vegetarians who don't care for eggplant, and some don't care for artichoke. I know it is not practical to ask many people, but if a friend asked me I would ve very touched that they took the time to get my input.
I just wanted to say a big thank you again. I actually had asked a few of my vegetarian friends (including my MOH) to give me their thoughts and preferences. Unfortunately they were split down the middle, so I decided I had to go to my next trusted source... Weddingbee! And what a help it has been! they both sound delicious to me! the one question i would consider is, are any of your veg friends vegan? if so the madeira cream in option b won't fly for them so i'd pick the eggplant.

Please help! Being a crazy meat lover, we are having beef as the main course for our wedding. However we are also offering a vegetarian option for all of our veggie loving friends. The only problem is we are both big on the meat, and can't decide which vegetarian option sounds better to those that would actually be eating it. So consider the two options below and let me know which one sounds better to you. Thank you so much for your help! Happy eating!
Option A: Miso and Sesame Crusted Eggplant Steak
Braised baby bok choy, vegetable gyoza, and wanton crisps, served with soy ginger dressing
Option B: Wilted Greens Filled Artichoke and Black Truffle Infused Isreali couscous
severed with butter poached spinach and madiera creme
