My FI just picked a random TA off the web (WeddingTravelPackages.com, a division of Traveloni.com) and I am trying to be a smart consumer.  Any feedback would be appreciated!

As an avid traveler I would suggest not using a travel agent. If you have the time do the research yourself. Do not forget travel agents are salesman, and they need to make the sales to pay the bills. I would feel much more comfortable doing my own research and trying to find my own deals. A few suggestions:

After you have picked a destination do a search on Travelocity, Expeida, Orbitz compare prices, and find what accommodations you like the best.

Then go to tripadvisor.com tho check out the hotel reviews.I do not go anywhere without checking this site first. My favorite section of this site is where you can look at recent travelers personal pics, because you can never tell how that hotel had held up since opening(when they take the pics to advertise)

Then go directly to the airline and hotels website that you found on the travelocity to see if you can get a cheaper price. Travelocity like website charge you a booking fee just like travel agents, but much cheaper. Sometimes they are cheaper becuase hotels sell blocks of rooms to them for a discounted rate. Good Luck!
