In an effort to eat healthier I have started preparing all of my meals for the work work ahead of time on Sunday. This week I’ve made easy marinated chicken to have for dinner each night. You simply mix 1 cup brown sugar, 1/2 low sodium cup soy sauce, 1/2 cup vinegar (I use Apple), and 1/2 cup oil (I use EVOO) simply marinade your chicken breasts in the mix for a few hours then grill or bake to your liking!

I try to roast a few trays of veggies to have for lunches during the week. Broccoli, cauliflower, zucchini, peppers…toss with oil, salt, pepper and roast for 30-45 mins.

I’m really into making big dishes that will last us a few days! We love leftovers, and I hate having to cook every night.
Today I made this-
Healthy, quick, delicious, and will last a couple meals for us! I love making soup lately- it’s getting chilly and I seem to always have a sore throat lately!
So this isn’t really meal prep, but def saves times since it is more than one meal
