Bees, I have been shopping for a cake knife/server and found I just don’t care enough about them personally, to spend money on it. Then I remembered maybe seeing one in my mom’s silver chest. Sure enough, there is – engraved with hers and my dad’s initials and wedding date. They divorced when I was young, and they’ve both passed now.
… Would it be weird or bad luck to use their server at our wedding?

I dont think it would be bad luck. I see it as a nice way of including your parents in your day. So what if they divorced? That marriage brought you into being, that is worth celebrating in itself.

Your parents loved each other enough to get married. Things happen, people change, and sometimes divorce happens. I don’t think many people enter into marriage thinking they’re going to get divorced at any set point in time. I am sure your parents entered marriage with the same hopes and dreams you’re entering your marriage with.
Use the knife. Add your and your FI initials to the knife and pass it down to your kids.
I see it as honoring your parents who can’t be there for you. I don’t see it as bad luck or any of that nonsense.

I don’t think it would be any sort of ill-omen. Whatever subsequently happened to your parent’s marriage, the knife reflects a happy day for them. Use it to honour their memory.
