Thanks so much for all your comments and suggestions! Seeing as quite a few of you expressed concern on the quantities, I am going to increase them, with a full mouthwatering list here in a min!

The new, revised and extended list:
A fresh cream vanilla sponge wedding cake.
2 chocolate cakes
1 coconut cream cake, 1 lemon cake
2 doz chocolate fudge brownies
4 doz meringues
2 doz carrot cake cupcakes
2 doz vanilla cupcakes
4 apple pies
2 baked vanilla cheesecakes
and ice cream, whipped cream, fresh fruit salad, and all the assorted sprinkles, sauces and wafers etc.
Now! Are we in business?!
@beebeebuzzbuzz: To be honest, I’ve gone off the candy idea quite a bit, largely because of my (selfish) overwhelming bias towards cake etc rather than candy! We’re not doing favours really at all – this is the only (irish) wedding I’ve ever heard of having an open bar, (at least since 1980 or so lol ) so I think they’ll be well enough treated haha!
ETA: our guest list at this stage will prob not go over 140. I’m assuming some of the men would sooner, once on their feet, go to the bar than the dessert buffet – am I wrong? I mean, I know that if a dessert is put in front of them they’ll eat it, but it seems to me that if they’ve to actually get up and walk twenty feet for it, many will choose to walk twenty feet in the other direction for a beer, right?!
That said, do you all think these quantities are ok? This lot works out as 200 actual dessert portions, not counting the ice cream etc. Eek! If ye are wrong, I’ll have a freezer full of cake after! Not that that’s a bad thing… 🙂
