I hate cooking. There was a thread started about hating cooking and I could have written that thread myself. I work shifts that change week to week plus I get yelled at all day from start to finish. DH works long, labour intensive days and is exhausted when he gets home. Thus, we eat out alot.
But…today I was silly and got ambitious. I’m making a giant pot of beef barley soup, and a pot of tomato macaroni soup that my husband used to eat as a kid. Should be good, right? You can’t really mess up soup, right?
What are you ladies/gents making for dinner today?

Sounds yummy! FI and I are both working late tonight so I spent my morning making pizza crusts so we can just top them and toss them in the oven. And we can freeze the extras!

I am having chinese take out 😛 though my FI made a delicious breakfast of bacon and eggs today. I love to cook but I just want a break.

Bacon cheese burgers with grilled oniona and fries. I have to work tonight so something quick it is.

Grilled thin cut, breaded pork chops, twice baked potatoes and probably some type of veggie.

Beef pot pies with puff pastry for the crust. Using up the last of our leftovers from a stroganoff type dish a few days ago. 🙂

Homemade pasta with a tomato vodka sauce. I’m not always this ambitious but we’re having guests over so I’m breaking out my specialty dish.

We’re having loaded baked potato soup tonight! We had chicken and dumplings last night. Yay for cooking 2 nights in a row lol

My man wants mac and cheese (he’s at work all day). Normally I make my favourite, butter nut squash mac and cheese, but he wanted someting a little different. So I just found a recipe for bacon and carmelized onion mac and cheese I’m going to try. Hopefully it works out! I think I will also make a cake of some sort for dessert. 🙂 he has another 12 hour shift tomorrow so I need to send him off with lots of food.

I’m planning on making a vat of chicken sweet corn soup (DH is starting a run of night shifts tonight and he likes having soup in the morning), and mangalorean fish curry – going to try and make DHs Dads recipe for the first time.

Super easy dinner for us tonight:
Baked chicken breasts and roasted broccoli.
Everything gets tossed in evoo, salt, pepper, garlic powder, and red pepper flakes. Put on baking sheet. 350* for 35 minutes.
Perfection every time.

rcac1208: Hotdogs.. In the microwave. Not even on the grille. I didn’t trust myself grilling after drinking this evening. Little bit of ketchup, mustard and sweet relish… That hotdog was good 🙂

We made General Tsao’s chicken with veggies and rice, and cream cheese filled wontons with sweet and sour sauce. I also had an apple with caramel cream cheese dip. Nom!
I find that I cook best with wine. In a glass in my hand, not the dish. 😉

Tonight I will be cooking, with FI’s help, tuna casserole, it is very easy to make, and a seafood dish that I actually like!

Tuna salad, with diced celery, Granny Smith Apple, jicama, cucumber tossed with guacamole, tzatziki sauce and reduced guilt spinach kale yogurt dip.
The last three are in place of mayo, and a serving is only 340 calories!
