We’re either having a stirfry, a frittata, or chana masala if I feel like actually cooking today. Either of the first two are really fast to make.

We’re just having some marinated and grilled Yellowfin Tuna steaks with steamed veggies and Near East Garlic and Olive Oil Couscous. Kind of boring and unhelpful but exactly the sort of easy dinner I like for a Tuesday!

What  ingredients do you have on hand?

Garden ravioli! Lots of veggies, cheese ravioli (since most “meat” ravioli doesn’t contain real meat), home-made sauce and lots of cheese!

I’ve been thinking of doing a curry.  We have some veggies and chicken which need to be cleared out of the fridge.  I usually just throw those into a pot with spices (curry powder, cumin, paprika), add some rice, and serve.

Balsamic Chicken and Roast Veggies (receipe from Skinnytaste.com…super simple and not bad for you!) Yummy!

We’re having eggplant parmesan with roasted broccoli and garlicky pasta. I just slice an eggplant, lightly olive oil, and sprinkle with salt, pepper, bread crumbs and parm, and bake it for 25 minutes or so. Super easy, pretty darn healthy, and yummy in my tummy. 

Another fun one is to make zucchini boats– cut a couple zucchini in half, scoop out the insides and fill with a mixture of ricotta, mozzarella and spices. So yummy! I usually serve it with a salad or maybe some pasta because I like carbs.
