What are you thinking about eating tonight (or if you're on the East Coast), what did you have for dinner?
Or snack, or dessert, or whatever?!?!?!
Tonight we were going to grill: seasoned cheesy turkey burgers, sliced potatoes, sweet onions and corn; but FI has worked 8 days straight and decided to go hang out with the guys tonight (Fine by me, I worked a 4am shift today; so no BBQ means I get to take a nap!).
As it would happen, I bought some raw pizza dough at work before I left. So, I think I'll make a cheesy garlic pizza for dinner and have some more green beans.
For dessert we have PB chocolate ice cream in the freezer and the rare treat of canned whipped cream in the fridge (left over from a picnic). I have been crushing graham crackers over the whipped cream/ice cream and it is to DIE FOR!
I made some breaded flounder with sauteed squash and broccoli. It was delish!
@Lady Baker:I want EVERYTHING you're having. Way to make my sweet tooth kick in! ;)
My DH had to work the evening shift so I made an early dinner of blanquet d'agneu...which is a pretty name for lamb stew. It's only for special occasions and I thought since he's taking his GRE tomorrow he deserved it:)
@JewishBride: that is so sweet! how thoughtful. I hope he does well! :)
We had breakfast for dinner with belgian waffles with fresh fruit and pecan maple syrup.
We had homemade mac and cheese for dinner. Now I'm eating some Chicken in a Biskit crackers. They make me feel sick but they're so delicious.
@JewishBride: Good idea (Good luck to him!). When FI is done with his 15-days-of-work; I'll be making him either chicken potato dumpling soup or cheesy potato crockpot soup.
It's nice when you can make someone you love a good meal as a way to show your love! (Crap, that sounds so corny!)
All your dinners sound so good. I just had left over kraft dinner and one of those chickens that the grocery store cooks and are hot to-go! lol... soooo not nom worthy.
@MissOtter31: Totally understand what you mean about Chicken in a Biskit crackers.
@JewishBride: Here's one a made a while ago. For less than $2 the dough makes a giant pizza!
I haven't eaten dinner yet. Can't decide if I'm going to. I had a big lunch (chipotle) and then at like 3 I had some pretzels with nutella. So I'm not really starving and it's getting late here (8:30). The belgian waffles from above sound pretty good though! I think I'm prob too lazy to get out the stuff to make that for dinner though haha.
I made Chicken fried rice, just nix the soy sauce and add Balsamic vinegar instead. I thought it was just okay but FI inhaled about 4 servings of it. And in an attempt to make it healthy it was equal parts rice and veggies with brown rice.
@MissOtter31: mm chicken in a biskit!! Love it. (except I dont eat it any more because Im veggie)
Tonight we had Morningstar buffalo wings in salad with ranch dressing...it was really good!
@PitBulLover: I LOVE LOVE LOVE Morningstar. I was going to get their mini corndogs for dinner but didn't have my $1 off coupon with me.
@Lady Baker:As a housewife I don't have very many ways to show my appreciation. BUT I think cooking your SO a delicious meal would probably be there first choice:) Your pizza looks delicious! Mail me some? lol
@PitBulLover: i <3 morningstar. my fav are the italian chicken patties (love them for fake chicken parm, chicken sandwich, or chopped on salad), and the black bean veggie burgers. even my dad will eat the black bean burgers and he's a guy that believes a meal isn't a meal unless something with a face is on his plate.
We're having a buttermilk summer squash soup - lots of squash on the menu lately, courtesy of our backyard garden! I'm excited not only because our squash this year has been fantastic and really flavorful, but also because I got out our pressure cooker yesterday and made a homemade vegetable stock with oven-roasted vegetables. I'd never roasted the vegetables before making them into stock, and it gave the stock an amazing depth of rich flavor. Can't wait to put that in a soup!
For a side, we're doing couscous with cherry tomatoes, chickpeas and cucumber. I plan to make enough couscous to serve the leftovers alongside tomorrow night's dinner (grilled lemon-herb veggie burger sliders).
@Mrs.ChubbyBunny: Mmm, we love breakfast for dinner, thanks for the reminder that we're overdue for one of those evenings. :)
Decided to make myself a caprese salad for dinner (sans bv because i don't care for it). I'm convinced it is the best food late summer has to offer.. mmmmmmmm.
We had taco salad :) I had some iceberg lettuce that was going to go south soon so I used that all up with some onions, warm ground beef with kidney beans and sharp cheddar cheese with ranch dressing and salsa mixed for dressing. So good.
Cumin-spiced lamb shanks in the crockpot with chick peas and spicy tomato...
@nycbrde2011:yumm! I always eat a brownie after biking my regular 6 miles and sabotage my hard work!
@MissOtter31: We had homemade mac & cheese too! ...well...DH did, I went on my run while it baked and told him to go ahead and eat, I haven't had any yet...I'm thinking I might skip dinner and just get dairy queen with the hubs ;)
I made a smorgishborg of things:
After last nights Bee discussion of low-cal snacks, I was obsessed with cucumbers and vinegar. So I made a cucumber, feta cheese, fresh mozzarella, and red wine vinaigrette salad ( its still chiling)
For the man I boiled up some pasta & threw on some italian sausage red sauce, and then put in some left over chunks of Schweinebraten ( pork roast) for some protein for him.
I made a quick salad with cesesar dressing and some cottage cheese for myself.
We're going to have some turkey dogs and some Mac and Cheese. My FI is awesome and has figured out a way to do a fairly low cal/WW points dinner with Sarah Lee 80 Calories and Wonderful buns, Ballpark Smoked White Turkey dogs (45 cal each!) and Annie's Whole Wheat Shells and Cheddar, which is the splurge item but still much better for you than other versions of mac and cheese. Mmm, now I'm hungry. Hopefully he'll get home soon so we can eat!
We had pork chops, garlic and cheese WW egg noodles, green beans and corn on the cob. FI eats all the noodles....no carbs and cheese for me!
@Aure: Annie's is the best!!!!! (Gotta admit, I love the frozen creamy stouffer's mac and cheese too.)
I was cooking for one again, until DH gets home next month. Man, I miss cooking big dinners!
Oh well! Tonight I made chicken fajitas.
@DreamsDoComeTrue: I officially hate you! Lol, jk! Cheesecake Factory is my favorite restuarant and I haven't been in ages =/
Canned ravioli! FI is working.. I didnt feel like cooking tonight.. Lazy me ;)
SO is away for the week so I had a tv dinner (stouffers stuffed peppers and mac and cheese)
We went to a sub place for dinner. I had half a chicken sandwich and fries (shouldn't of had the fries but I had a craving).
@Lady Baker: Stouffer's is my favourite... I would eat it every night if I could! I love Annie's too though!
@organizedbride11: Chef Boyardee is my lazy night standby!
