We had leftovers of last night’s dinner. FI made a delicious penne pasta with short rib sauce. It’s one of my favorites. Added with a little bit of french bread — DELISH! I plan to have a little low fat ice cream in a few minutes. πŸ™‚ Your stuffed shrimp sounds to die for!

I think I am going to make pasta with sauteed onions, tuna, olives and capers. I just don’t have the energy to be creative. Maybe we’ll head down to Long Beach with you, we love shrimp and the smoke from these fires isn’t any fun to be around! πŸ™‚

DH is at his karate class so I get to eat what I want! I had lemon pepper pasta (from Trader Joe’s) mixed with fresh feta, cucumbers and tomatoes, basil (all from the garden), olive oil and vinegar.

 

I love summer food!

We made grilled peaches for dessert last night, it might go with the grilled shrimp.  It was a yummy dessert and I had never tried it before.  Tonight I am eating leftovers, my FI is out of town for work.

Leftover pizza from the hospital cafeteria.. yummm. (I am not sick, I live in the hospital because I’m doing an internship here).  Laffy Taffy for dessert!

I made chicken parm and sauteed zucchini for hubs…frozen kashi meal for vegetarian me! I usually make myself a veggie version of his meal, but tonight i did not have the energy!
