Sloppy joes for us. What can I say, we're saving for a wedding here!
FFIL is out camping so we are using his BBQ! My FI will probably grill up some animal and I will be grilling up some homemaid seitan burgers or hot dogs, I haven't decided yet. Also a veggie mix.
mmm I'm going out for delicious mexican food.
But for lunch I made penne with chicken and broccolli in a lemon garlic sauce. YUM.
We’re having fish tacos.
White fish grilled with s&P, garlic and lime juice.
Warm tortillas and fill with: fish, avocado chunks, cabbage slaw (shredded green and purple cabbage), diced white onion, and plenty of Chuolo hot sauce!!!!
Grilled corn and mixed green salad on the side.
Dessert is blueberries and raspberries from the farmers market - yum!
Chinese takeout tonight, most likely. :)
Although I did make some really awesome chicken fajitas last night. YUM!
We have so many leftovers from last weekend. My sister's boyfriend fishes a lot and brought me some georgeous mako shark steaks. So we will have that and steamed veggies... wedding diet over here....:)

Garlic & Basil Pasta and Keilbasa - yeah I haven't started my wedding diet yet.
lol FI is eating leftover chinese food and i'm most likely not eating or have strawberries or something. didn't get lunch until 430 so now i'm not hungry. boo. :)
I'm attempting an enchilada cassarole. But I don't think it's going to turn out well...
@SaraRocks: i make an enchilada casserole all the time! what are you putting in yours?

Grilling some salmon and having some couscous and Greek salad on the side. Last night I got together with 2 of my BMs and we made a red velvet sheet cake. We cut it up into smaller mini cakes to decorate and we'll be eating what I came home with for dessert!
We're having pulled pork sandwiches, coleslaw, and grilled corn on the cob. YAY! I can't wait until DH gets home.
I'm making a Quorn roast with yams, potatoes, carrots, and onions. Hmmm....I drool thinking about it!
We forgot to defrost the chicken for tonight, so we're resorting to boxed soup, but last night we had the most amazing fish. Normally, we're all about the salmon, but Trader Joes had some nice wild alaskan dover sole (frozen) that we baked in the oven with a basil and parsley crust. Seriously SO easy and tasted much better than the effort that went into it. Just roughly chopped some basil and parsley and combined in a food processor with about 1 cup of bread crumbs. SO GOOD
On the menu for tonight: spicy Italian sausages, mashed potatoes and peas/carrots. Nothing fancy :)
Also, on the menu for dessert was a chocolate cake made from black beans. I know it sounds...interesting, but it seriously tasted amazingly good.
@vistagirl: My enchiladas is a variation on the regular ones I make with canned tomatoes and chiles, olives, corn , sour cream and cheese. I added some rice and extra water, but the rice isn't cooking! I'm giving it another couple of minutes and then scraping it for regular wraps...
What's your recipe? I would love to try one that actually works!
FI just texted me he made dinner! But, it's a surprise....Love that he cooks!
Panko crusted tilapia and sweet potatoes! One of my faves!
I put the rice in a rice cooker first with 2 parts rice, 2 parts water and one part enchilada sauce.
Then I use my round casserole and do a layer of rice with some cheese, a tortilla, a layer of beans with some cheese, a tortilla etc. sometimes I add corn, black beans or grilled veggies(usually bell peppers and zucchini),
sometimes I add chicken that I cook in enchilada sauce until it shreds with a fork.
then I pour some enchilada sauce over it and top with yet more cheese.
When it is done I top with tomatoes, sour cream and cilantro. it is super easy!
Lastnight I made country fried steak, mashed potatoes & gravy, and peas.
Tonight will be a lighter meal! Grilled chicken salad.

Last night I made a really simple recipe from my CookingLight book.
Cubed chicken (I cut up tenderloin strips) cooked on the stove with a small can of salsa over wagonwheel pasta (I used egg noodles) and topped with cheese. Really good and pretty easy.
My husband doesn't like pasta and he ate it all (but he was really hungry from doing home renovations all day).
flatbread pizza & salad.
local tomatoes, moz & basil.
salad w/spinach, homemade croutons (with homemade bread), vidallia sweet onion dressing, tomatoes & goat cheese.
Tonight - fast, easy weeknight dinner - chicken breast cut up and simmered in Trader Joe's massala curry simmer sauce. When the chicken is almost done, I add tomatoes, bell pepper, onion, and spinach. Then I serve it over jasmine rice with steamed veg (green beans tonight) on the side. Yummy and fast.
Last night was the 4th anniversary of our first ever date. Came home to find hubby in the kitchen, cooking my fav meal (crab linguine) wearing nothing but an apron and a chef's hat...
