I changed my mind about exactly that too! I always joked that a quarter machine ring was just fine. Okay, so my FI proposed with a dime taped to a keyring anyway :P But I did pick a diamond ring out. It was still pretty inexpensive but I think we'll splurge on the wedding bands, which we never thought we'd do. As you say, we'll be wearing those for the rest of our lives.
I also thought we'd just have a friend who's good at taking photos do the wedding photography, but we ended up hiring a pro who is 50% of our budget, haha. And we got engagement pictures (they were included in our package) which we never thought we would.
I really wanted favors. Speciality ones. We decided that after cocktails hour with snacks, Salad, plated dinner, and a night of drinking and eating yummy cake, it just wasn't in our budget. Then I thought about it.... We are treating our guests to a wonderful fun evening... no need to add favors. Half of them get left anyway and I couldn't fathom spending $3 per favor for 300. They were going to be etible.
I dreamed of having a tea length, 50's style informal dress. Instead I'll be wearing a full length gown.
Didn't think I wanted a veil. I ended up loving my veil more than my dress.
@Jenniphyr: I changed my mind on my wedding ring, too. I'm okay with the cost, but I realized I kind of hate the one we bought. I also changed my mind on what kind of centerpieces I wanted... After we bought stuff for the first idea. :-/
@blayne7: I changed my mind about my dress, too. Actually, the entire theme of our wedding changed! Initially we were going to have a picnic wedding at the end of summer (blankets on the ground, sandwich bar, homemade cupcakes, sundress for a wedding dress, barefoot with a daisy chain in my hair, etc.), but first my dad hated it, and then it turned out that we'd have to wait an extra year because of my FH's internship (we're waiting until after we graduate from university; we were both supposed to graduate in April 2012 & marry in August, but he took a 16-month internship, so he'll graduate in December 2012 instead, which would have meant we'd have to wait until 2013 to have a picnic wedding). So, instead, we're having a winter wedding indoors, I'll be wearing a formal gown, we're not allowed to have homemade cupcakes at our reception venue, etc.
But the ring thing is what really shocks me, because up until last night I still thought I was against splurging on them, and then I actually thought about it and realized "holy crap, I'm actually okay with spending mucho $$$ on jewelry"! (My FH is going to be so happy -- he always wanted to splurge on the rings, but I refused! LOL! : D)
I changed my mind about the ring. After we got engaged, I pointed out the inexpensive rings out there. Later I figured out that there's a reason that ring is $300. So while I think my ring was modest, it was way more than I thought we would spend at first.
I also flipped on the dress. I was set on lace, and ended up with satin/tulle and silver beading.

When I started planning my wedding I wanted to keep our total ring budget under $100, and I was totally firm on including the figure in the day-of total -- now, even though I still kind of seize up at the thought of spending over $50 on a piece of jewelry, I've totally come 180 degrees! I mean, that "piece of jewelry" I'll be wearing for the rest of my life (and my FH his)! Why not spend a little (or a lot) extra on it so that the rings will be what we really want, and that they'll last?
