I think they're great! If you don't like the colours of the princess, could you maybe paint her to match your wedding colours or so that she's wearing all white instead?
Love the knight and dragon :)
I think they're great if you love them. If it were me, I wouldn't use the dragon or would get a smaller dragon or have the dragon on the table.
But I think it's most important that you love it and it fits you and your FI.
Maybe get out a can of spray paint and paint them all white? That way you have the figures but without the bright colors. That would probably take away the child-ish appearance you are worried about.
It's playful and fun, and will be unique to the two of you. Depending on the material they are made from, you may be able to paint the dress. I wouldn't paint the dragon, but that's just me.
Here are some other samples of princesses & princes (no dragons, sorry) which may look less kid-like, if that is what you are trying to avoid:

I think if they are sitting on a traditional white cake they won't look "childrens birthday party" but they might if they were on a colourful cake or something.
Your wedding... your way! I love wedding cake toppers with personality! If this better represents you than a traditional bride & groom topper would then I say go for it :)
On a classy cake they won't look childish but the dragon is way too big
We always joke about FI being my night in shining armor, so if we had decided to go a different way, I think we would want something similar.
I think it would look nice. They don't look like children's toys they look like something a collector would purchase. The only thing I would be worried about, is if all 3 of them will fit nicely on top of the cake.
I love it! I had our goofy college mascots as our "cupcake topper" and loved the fun look :)

I looked everywhere and couldn't find the caketopper I wanted (a knight and a princess and if it had a dragon--BONUS!!!), so I decided I was going to make my own. I went to a local hobby store and bought the following. Tell me if they look ok. I don't exactly like the color princess but I think it works. We are doing subtle hints of knight and princess things but we don't want it to be like a children's birthday party.
These are the photos: (sorry they are so large and that the last one is so blurry)
