It was something called “french chicken”. I don’t think it was actually French, but it was simple, delicious, and a crowd pleaser. It was just pounded chicken breasts, coated in egg, flour and parm cheese, seared, then baked in melted butter. Mmmm! It beat the pants off of any other fancified chicken dish I’ve had at a wedding.

We served chicken marsala– it was a big hit.  The chicken itself was boneless and skinless tenders, which I recommend, since trying to debone chicken at a fancy event is a disaster waiting to happen.

I had the best chicken at a wedding I attended in June. Here’s the description: Peruvian style chicken, potatoes, olives, queso fresco, escabeche, aji amarillo sauce. Probably the best chicken I’ve ever had at a wedding including my own.

Biased because we had it at our wedding, and also because I can’t always have alcohol (marsala) or cheese (parmagiana).

Ours was a herb-encrusted cherry-pecan chicken breast.  So yum.

Best chicken meal I ever had at a wedding was a simple roasted chicken meal with roasted potatoes and grilled veges. Simple and so good!!!

The worst was chicken tetrazzini. It was basically chicken with mushroom soup on it…..so gross.

I want to add that I feel like chicken is usually just fine at weddings as long as it’s boneless, skinless. The chicken picatta was the best I’ve ever had, but when I ate chicken (now a vegetarian), I usually liked it at weddings except where there were bones. First of all, it’s kinf of annoying to deal with bones as a nice meal, and second of all the bones impart a really awful flavor is the chicken is overcooked, making it much worse than simply rubbery.
