You can't really buy sugar crystals that big. It looks like someone may have crushed up some rock candy!
It looks like sugar crystals to me. I was just watching a cake challene on Food Network last night where they put "crystals" all over a tiara and it looked just like the stuff thats on the cake.
i was thinking sugar crystals as well, sort of like the kind that goes around the rim of your alcoholic drink. they have them at the grocery stores near the candles...
Sparkling sugar maybe? It seems to be coarser than normal or sanding sugar.

It's definitely sugar crystals. My mom does wedding cakes and she's definitely used stuff this coarse before... I'll ask where she bought it!

ms. kitten had the same sort of sparkely cake- it is what we are doing too! She never wrote a post about if it was good though...

I saw a cake like this at the bridal show this weekend and in person it was gorgeous!!!!! I'm having a relative make my cake for me and I wanted to get this stuff for it. I should clarify... the stuff stuck to the actual cake, not the icy stuf sticking out of it
