i agree that the pasta is less than inspired. what about a terrine or a beggar's purse? what are your preferences?
We're having grilled portabello mushrooms on seared tofu, herbed polenta w/ balsamic glaze.
Hmmmm. We didn't have a veggie dish, but only because we literally didn't know a single vegetarian at our wedding.
I always love eggplant parmesan, if it's done right. Polenta is really delicious, too. Oooo and vegetarian lasagna is delicious if you make it really fancy.
We are doing a Spinach and Cheese Cannelloni with a zesty Tomato Sauce!
indiebride, I'm right there with you. My parents and I are vegetarians, so the veggie option has to be good! We haven't picked our menu yet, but it definitely won't be the same old pasta primavera. Our venue said they can do almost anything -- their veggie choices now are a roasted vegetable and couscous streudel or a portobello stuffed with polenta and grilled vegetables. I would probably pick the couscous if those were my only options, but I'll probably try to have them create something new.
What would you like to have? I can tell you whether it would be something I would like to eat! (Although honestly, I'm usually happy if the entree is just the slightest bit creative.)
We are going out to eat, but I specifically chose a place where I can get pizza or pasta, easy to make vegan!
I love a creative veggie dish (I'm a vegetarian as well!). Unfortunately, our resort didn't have too many crazy options...I think I had pad thai with tofu?
Anyway, I hear ya! I am so over limp pasta, a plate of random vegetables and anything terrined!
Although, it is only one day for your guests, so I wouldn't worry too much about it!
I know a couple vegetartians ... but I'm a huge meat eater. So I don't know yet. I definitely want to provide something fantastic. I loove grilled portabello mushrooms!
We're having a veggie panang (mild thai) curry with tofu. The rest of our courses are served family style so besides the meaty and starchy dishes, we have corn & soybeans, and grilled herb veggies in addition to a gazpacho starter and a small mix-green salad.
Pasta primavera with summer veggies and a parmasean cream sauce -- and the pasta will be al dente and delish!
We can't seem to decide on a veggie dish for our dinner. We're having sort of a Thanksgiving themed dinner (turkey and stuffing, etc) and obviously I can't serve my veggie guests turkey! So far we have the pretty lame veggie lasagna as a default option, but we really want someone more interesting that will fit into the theme. Any ideas? I personally love creative veggie ideas, so I'm open to anything!
@Karii: I personally love a good veggie lasagna. Maybe make it with butternut squash so it goes more with your Fall/Thanksgiving theme? And I always do fine at Thanksgiving with everything but the turkey (as long as there's some veggie stuffing), so I wouldn't worry about your vegetarian guests going hungry!
Ours is a giant, grilled portobello mushroom stuffed with a roasted red pepper, zucchini and bread crumb mixture and a hummus-y garlic sauce. We are not vegetarians, but we eat a lot of vegetarian food anyway. We thought this looked really tasty.
I only have 1 vegetarian friend (at least that I know of), so I let her pick the entree. There were three choices, but she was very excited about the portobello lasagna, so that's what we are going with. I'm sorry I don't remember what the other options were.
We're serving our food family style, with lots of grains, starches and veggies for the vegans and vegetarians to make a meal from (on separate platters, of course. My sister won't eat food that was once on the same plate as meat.)
But I do feel bad about vegetarians and their limited protein sources. Mushrooms and pasta are tasty, but they are not the basis for a balanced meal. Depending on the general flavor of the menu, you could do a great lentil curry, lentil salad, lentil and rice pilaf or etc. At least that way your guests will get some protein and fillingness. If you're going to take a vegetarian menu seriously, then I think there need to be legumes and/or tofu. (And pad thai with tofu is delicious!--and I'm a passionate carnivore.)
We're doing Lo Mein with grilled vegetables (we have an asian theme). But I seriously don't think there are any vegetarians at our wedding...
We're having a veggie lasagna and then they get the same sides as everyone else.
We actually are big meat eaters... we are having a steak, chicken and a fish option. There are only 2 vegeterians invited (who may not even make it) so we will enclose a personal note to them letting them know we can get a personal entree for them.
We had the same choice as Miss Taffy--a wild mushroom sacchetti (like a little pasta purse) in a garlic cream sauce. It was so yummy, my husband and I both had it for dinner. And we're not even vegetarians!!
Thanks for your suggestions, everyone. Your choices all sound delicious. I need to wait and see if the vegan invitee responds with a yes... if not, then that opens up the possibilities quite a bit!
Right now, we have a veggie and cheese empanada and veggie paella. Also, we are doing some pasta with eggplant. My fiance is a vegetarian and we know a ton of them, so we wanted to have some options.
We're serving ratatouille on a bed of fried polenta!
sigh, my coordinator won't tell me. I've asked over and over again and finally just had to put "Vegetarian" on the invitations. Hope it's one of the above because they all sound yummy.

What is everyone offering for a vegetarian entree choice? I am vegetarian, but very picky, so I'm having trouble deciding on a meal that will appeal to all the other vegetarians, instead of going with my own preferences. I'm hoping to avoid the generic pasta primavera or stir fry that is usually the veg choice... it always makes me sad when everyone else at the table gets a fancy looking plate and mine looks like what I made myself for dinner the night before!
