    I'm stuck at the computer at home all day working on a class literature review presentation. Powerpoint slides are the bane of my existance... Therefore I had to make a lunch to eat one-handed!

     

    So, tell me, what are you having for lunch today?

     

    I did a whole wheat tortilla with pesto, turkey and spinach!

    I had braised-beef stuffed tortelloni with an aged tomato/sauteed onion sauce and shaved parmesean cheese! 
    (FI took me to lunch - we work next door to each other and go to lunch together sometimes).

    LOL, @JeniRae - we went to an Italian restaurant that's a block away from our offices.  It's a splurge, so we don't go that often...but it's SOOO yummy!

    2 eggs (cooked with cooking spray so no calories!), a golden delicious apple, and 1 slice of whole grain toast. A huge cup of water -- I went to the gym right before lunch! ... and I think I might have burned through it already because I am hungry again. That's what I get for skipping breakfast booo.

    Your lunch sounds delicious (and I have a [notso]secret love of PowerPoint).

    Trying to eat a little healthier, so instead of McDonalds or something along those lines I went to Zaxby's and got a Ceasar Salad. Did not like it, though!!!!

    @ Crash, it's actually called Ezekiel bread.  It's based on scripture though so I call it my Jesus bread. 

    Ezekiel 4:9., "Take also unto thee Wheat, and Barley, and beans, and lentils, and millet, and Spelt, and put them in one vessel, and make bread of it..."

    "We discovered when these six grains and legumes are sprouted and combined, an amazing thing happens. A complete protein is created that closely parallels the protein found in milk and eggs. In fact, the protein quality is so high, that it is 84.3% as efficient as the highest recognized source of protein, containing all 9 essential amino acids. There are 18 amino acids present in this unique bread – from all vegetable sources – naturally balanced in nature."

    @Miss Biner - OMG, the "Jesus Bread" is soooo good. My hubby pulled it out of the organic frozen aisle and I just wasn't sure about it. We used it for burgers that night and WOW. They were a lot better than I thought they would have been!

    Homemade tomato soup with pureed tofu instead of cream. I know that sounds gross, but it's delicious, low fat/calorie and you would never know the difference if I didn't tell you. :)

    @mtnshine-  I love using silken tofu for cream cheese in dishes! (Specifically buffalo chicken dip, which is DELISH but terrible for you if you follow the recipe!)

    A Jimmy John's (the best sandwhich chain ever!) unwich - lettuce wrap w/ turkey, avocado spread, cucumbers, tomatoes, and alfalfa sprouts and salt and vinegar chips.  Oh, and a diet coke.  Yummy!!!!

    A whole wheat lasagna roll-up (made with whole wheat noodle, ground turkey, skim ricotta, and tomato sauce) and half a cup of nonfat vanilla yougurt (sprinkled with a few chocolate chips ;) ) with a side of water!
